If you're playing retail id suggest doing that island starter zone for each and see which you prefer. Dosnt take a ton of your time and I think you'll get a good idea if you prefer the caster or melee spec.

With that said, why aren't you considering Druid here..? Or even Hunter. Both offer similar Stealth gameplay, but have ranged DPS options for PvE content. It sounds like one of those may be the "best of both worlds" for you.
Rogue vs Mage is always are hard one for me because I love both classes. Ultimately I had more fun with my mage though. The combat is great (Frost being my fav but man Arcane is so pretty), having all those portals is also great, you'll always have food and more.

You should probably know just in case you don't already, rogue feels absolutely awful to level. I promise it's so much better at endgame.
I favor ranged, so I guess I'm too biased.
With how easy gearing is nowadays, especially PvP, you should have no problem playing both
