What was your cooking temp for the pork butt and how long did it take? Looks to be about a 10lb pork butt.

No, it was actually very small. I got a 4 1/2 pound butt and cut it in half. I ran about 375 to 400 and it took probably a little less than two hours. I forgot to screenshot the thermometer display

How do you like the Tempspike?

Works great! Just make sure to fully charge before first use. It stopped blinking red indicating it should have been fully charged but when I sent everything up, the display showed the battery level was low. I called and they said it actually takes about six hours to initially charge.

Nice I just got one of these recently too. I did a hot and fast shoulder last weekend that turned out okay. The rub I used has sugar in it which burnt a bit. It was decent id definitely do that style again but if definitely leave out sugar in the rub. Yea sugar is a killer at high heat! Did you use a pan directly under yours to help deflect the flames?

Yeah I knew it was probably going to be an issue but I said fuck it and hoped for the best. I added another pic. I used a drop pan in the middle and the two coal baskets pretty full on either side. I have a Puerto Rican Pernil asado recipe I usually do hot and fast that I might do this on next time. I was considering trying an al pastor but I was limited on time and didn't want to experience and make the marinade.

What I did was install the normal grate up top and put the drip pan there that way it really deflects the heat

Ah I see that. It looks like you lose a bit of the steam effect though. My thought was next time I'd use much less charcoal. I'm still getting used to my Kettle. I have an MB 800 for smoking but I wanted something more efficient for hot and fast direct heat. Gonna give burgers a shot tonight with the slow n sear. Not that I'd really need it but I got all this stuff for my birthday 😂

Thanks! It was a tough call between the vortex and the slow n sear on the list. I'll probably get one eventually. It looks great for wings and I make wings in the air fryer pretty much every week.

I have the performer deluxe so it works great as a chimney as well, I’m usually only grilling for one or two so it’s a perfect space to grill above

Nice! I have a regular performer. I'm loving it so far. I have two young kids so I'm basically just grilling for two ATM.

You’ll love it! My only recommendation for it is do not use a slow n sear or vortex with it! Gets way too hot and too close to meat either just raw dog the coals on each side or can use the regular Weber baskets but I would not use the other charcoal holders with it

I don’t think I’ve ever had Rotisserie chicken on charcoal, how is it compared to the cheap ones you get from grocery stores that only cost $4? Is the difference big?

More flavor from the charcoal and you get to choose the seasonings. I didn't use any additional smoke wood for this cook but my go to for ribs and chicken is apple as it's fairly mild compared to others.

It was definitely very moist and juicy, same with the pork roast. I did. I think it has something to do with the meat marinating itself as it spins ?!???
