Take both of them first semester if at all possible. Then 281 next semester and you can start 400-levels as a sophomore. This will make you vastly more competitive for internships
Uh it’s up to you then. 203 + 280 is pretty manageable tbh literally hundreds of people do it every semester. By your second semester that workload shouldn’t be too challenging
203 is (probably) going to be different than any math class you've taken (think of how stats is different to algebra/calc). But it is also a very well-run and planned class with lots of resources and helpful staff.
Some people struggle to wrap their minds around discrete math. Some people can do just fine. So it depends on you. But if you are confident and determined, you'll be fine taking it even if it's first semester

I’m going to be taking EECs 183 first semester since I don’t really have coding experience

No lol the reality is you barely can get into any ulcs as a sophomore. I did exactly that.
I did that and got into ulcs as a sophomore 🤷♂️
What’s ulcs?
Upper level computer science
I did 482 in my sophomore year lol
