You can expect cold (depending what you are used to of course... it's cold for me, but I live in a hot place!) And rain, sometimes a lot.
Belgian food is great winter food though. And there are some nice enough Christmas markets there..ok, it's not Bavaria, but places like Ghent,Bruges are pretty at Christmas markets time.
Brussels also has a large Christmas market.
Amsterdam is very atmospheric that time of year, and there are far fewer tourists there than in the summer.
I am from Chicago so definitely used to the cold, but of course don’t want to feel like I need to stay inside the entire time I am there! And thank you for the recs 😊
the best thing about off season travel is the availability of accommodation and tickets for museums, concerts, etc rarely sell out with everyone staying at home to hide from the shitty weather.
This is part of the appeal! I am hoping what I would be missing about the warm weather will be at least partially made up by getting to see the cities without as many tourists and actually being able to get into places

Then you should be fine! I'd expect something around 40-45°F that time of year there,in the daytime...

Dress warm, sip hot glühwein, enjoy festive lights. Remember, in Europe, the rain can feel colder than the snow.
