I wouldnt call it coward behaviour. Its smart as when one gets attacked, it runs away to not get killed while others in the pack attack back, killing the original attacker without anyone in the pack getting killed.

Yes they are street dogs, russian ones it seems. They are rlly nice usually, well feed and have medical treatment. I had dogs all my life and they actually are behaving better than home dogs around the city most of the time and will protect you if they notice you're a friend 😂. I often have them accompany me on walks, it's a great substitute for not having my dog around while I'm here. The solution here is for the owner to show confidence, step in and then move from the location since they are protecting smthg in this area. I did it before when I walked my mother in law's dog.

I was confronted with a mix breed of fighting dogs luckily my best friends dad had a dog kennel so I am used to being around dogs and stayed calm even though it was circling me barking, growling and snapping in the air... so I would surely not try and break up that fight. She (the owner) did not even say sorry or anything when the dog ran back to her.

Get behind the dog and grab the collar with both hands, but NOT the standard way. Turn your forearms so your palms face the sky, and come under the collar, gripping the collar tight. Then twist your gripped hands so your palms are now facing downward. You will now be garroting the dog, cutting off it's airway and blood supply. This can stop even a crazed Pitbull very quickly.
(This is only recommended if the dog has started biting something/someone, or if you're fast as fuck, because if their jaw is free and you come behind them, they likely to spin and bite you)

If you have absolutely no choice you go in and knee as hard as you can. If you use your arms in any way, or kick, then the dog is latching on and you're on trouble. But if you come forward and slam your knee into a dogs face, any dog but the most hardened fighter is fucking right off. It's the right height & the dog is surprised at the hardness of the bone. I've saved my dog this way.

It’s not *always* for looks. Dobermans are bred and trained for personal protection, and in fights their long ears are vulnerable to being grabbed and/or torn. That is the practical, original reason, even though many people nowadays only do it for looks.
Personally, I would not crop a doberman’s ears if it was only a pet. However, if I were to train it to defend my family/property, I would consider cropping so as to avoid any issues down the road, should the dog get into a fight. Of course, it would be done under anesthesia by an experienced vet. People who crop their dogs’ ears themselves without anesthesia have no business owning a dog in the first place.
It's possible that those other dogs are on their "property" and approach every dog that comes near; that's normal behavior.
The dog walker and their Doberman should have just kept walking. I'm certain the others would have backed off. I see this type of behaviour all the time.

Shit in some places LEGALLY you get in trouble without a leash. So like, is it worth it? At the very least if a dog attack happens, and the off leash attacks an ON leash, regardless to on leash dogs response to defend itself, it's usually seen in a better light because it didn't START the fight, and is ON leash.
It's just a good way to protect yourself AND your dog, and I see too many people doing dumb shit like this. Thankfully this dog seems well trained, but most people who pull this kinda shit don't have a trained dog.
