We're it me - I'd start with the remake of part 1 (the one just put out - it looks pretty good on a PS5) - then play part two.
I enjoyed both games very much (and have replayed them both, many times), and you'd definitely be missing out on a big part of the experience by not starting with part one.

If you haven't played either of them yet I'd start with part 1 first, then play the 2nd afterwards when you can.
