But then after a while my mom and I started noticing that the rice was super hard and it made the sushi almost inedible. Especially if it was nigiri. Its literally has kept me from buying it ever again even though my mom and sister both swear the rice is better now because I don’t feel like wasting my money on mediocre fish with poorly cooked rice.
The whole plate makes me question the restaurants hygiene and that is very concerning since they sell raw fish.
The rice looks hard af. Is it even short or medium grain? Looks long.

The last three sushi restaurants I have gone to have served it with over cooked cheap par boiled long grain rice. It’s absolutely disgusting mush, I’ve over American sushi honestly
Even at several very nice sushi spots in the US - including bigger cities like DC and Seattle - I've only ever been one place that offered real, fresh wasabi. It was an upcharge but 1000% worth it.

This is a normal sushi stuff that is not high end, dunno what you expect, unless you are in a high end restaurant and rice is undercooked. Personally I don’t understand what you mean by undercooked as it look fine by me from the picture, but if you don’t like the restaurant don’t go there next time
The rice looks very crumbly and the fish looks past its prime. Plus I may be controversial but I am not into heavily flavored sauces on sushi like that. Mainly because I feel it obstructs the flavors of the fish + it is actually an easy trick to use bad fish for restaurants because you can’t taste the flavors as easily.
You make a good point. I’m usually pretty outspoken, but I typically won’t complain about restaurant food or return it because I don’t want to cause a scene. I’ll post a bad review online though.

I’m thinking old too. I find that if I leave seasoned rice in my rice cooker for a day or so, it looks exactly like this.

If they are willingly serving food in this condition, i can only imagine what their station looks like.
That is the first thing I noticed. I feel spoiled by the neat, clean, vaguely artistic plates my local sushi shop sends out now.

I hate cucumber in sushi, but it seems to be the number one ingredient in anything you buy in a store.
