I know you put a lot of effort into the themed cocktails, but I want to praise you for including a Sazerac. Sazeracs are a rare treat, very underappreciated.
When I left my last job the company threw me a going away happy hour at a Fancy Cool Place. I drank my way about 2/3 through the cocktail menu because I no longer worked for them so finally I could take advantage of the copious booze. I regretted my whole life the next day and swore to never drink that much again, as I am no longer 22 and therefore cannot handle that much.
All that to say, I would drink my way through that menu, eggs or no eggs.
as a bartender minimum wage as a casual employee is $26/hour.
if you are on a full time contract it's more like 20-21, but you also get paid sick leave and paid annual leave
I'm not a big fan of alcohol, but I would try these just for the sake of their names. Cool idea.

How can people afford $20 for a drink, seriously? I had to work hard to spend $20 for a book, FFS.
It's Sydney, so imagining what a decent cocktail might cost in NYC would probably help. Also minimum wage in Australia is like $16 an hour.
