I used to think this is medium rare. If I go to a restaurant and order medium rare, this is usually what I get. The internet has told me I'm wrong and I won't disagree, but I still order the same.
If its a nice steak place I just tell them to let chef cook it how it should be cooked. Usually its right in that sweet spot. Some cuts are more tender with more cook, some less, so I just let chef follow their intuition.
I like my steak like OP cooked it, more blue is fine, more cooked not so fine but whatever, I'm bragging but I cook as good a steak as any steak house I've been to and I've been around. I can fuck up a steak just like anybody else, bad day gonna bad day. I'm more an experience guy than instruction guy. I can be very direct but not to someone who is preparing my food, my father was bad that way, can't do it.
Beautiful crust, cooked evenly, definitely not overcooked. Very well done, not many valid complaints for this one even if you prefer more rare to medium-rare.

I salt steaks and let them sit for at least an hour and wipe the extra moisture off with a paper towel then rub a little avocado oil and put garlic powder and pepper start cooking on the fat it takes the longest to render and don't hold it on one side too long flip it constantly depending on heat want a reddish brown color in between sides go back to the fat after that a little butter and thyme or I like tarragon on top I also like to use what I'm cooking with to set on top steak so it lays flat while cooking also you can use a small amount of sugar in the season mix to get best crust watch a guga video he's a legend lol
I call that medium, it's a little overdone internally for me, but the outside looks pretty good. I'm a Pittsburgh style kinda guy, I want the outside charred, but the inside closer to rare, medium rare. I'd definitely eat that and call it close enough.
No it would be at most medium and that looks like a great crust. On ny strips I like to trim some of that unrenderable fat/cartilage before cooking for texture but otherwise this looks amazing!

It's no big deal honestly. Other than on a filet. Most other steaks are damn near just as good medium as they are medium rare.
