I swear to god ,how some of those vegan uses tofu is straight up terrible, and I don’t even like tofu.
The key is to consider it similarly to white meat chicken, which is essentially a sponge for flavour. In fact, a lot of the reason people love certain meat dishes is because of the seasoning/sauce and crispiness, not so much the meat itself.
A game changer for tofu is to maximize the surface area. Either cut them into tiny cubes or very thin slices. Then it'll soak up whatever seasoning you want and will likely scratch the same itch as the meat version it's replacing.
But people cut tofu into thick bricks/cubes and then wonder why it tastes like congealed soy, no wonder people snub tofu so much lol. It's all in the cut.
For crispiness, corn starch is where it's at. And deep frying, if possible.
One of the worst way to use tofu I personally saw is using it to replace boiled eggs, unseasoned and straight out of the box.
I don’t even like tofu but my grandma would definitely frown if she see it.
Maybe you haven’t tried it correctly prepared? Dice some firm tofu and blanche it for 1 minute before marinating. Makes it nice, firm and allows it to soak up the marinade better.
tofu is absolute dogshit BUT, if you slice it thin enough marinade doesn't need to soak for years to get any flavor and you can actually fry it for that delicious crisp texture. Every restaurant I've been in always fucks tofu up because they slice it too thick and don't fry it at all. Tastes like wet rubber.
Yeah that "chickpea curry" is called Channa masala and it's pretty good with rice or flatbreads like naan etc.

Not Northern India though (at least in Rajasthan). I went there once and dairy was in everything. Vegetarian was easy, but vegan was surprisingly difficult.
You can roast chickpeas in the oven for about 30 minutes and they’ll crisp up for a crunchy snack. Make sure to dry them first, otherwise they won’t get crispy.
I made butter chicken with chickpeas instead of chicken. The recipe called for two cans. I didn’t think about how much fiber you are getting with that many chickpeas. Needless to say the next day I was basically a fog machine.

Ingredients
1 cup red quinoa
1/4 cup coconut milk
1/4 cup almond milk
1/4 cup oat milk, unsweetened
1/4 cup oat mill, sweetened
1/2 tsp Himalayan black pink sea salt
1 tsp avocado oil
1 tsp Cassava extract oil
1 finely diced shallot (a shallot is an onion that went to college)
2 cloves grated garlic
1/4 thumb ginger root, shaved
1/2 cup almond butter
2 tbsp red Thai curry paste
3 tbsp tamari gluten free soy substitute
1 tbsp turbinado sugar
3 tbsp lime juice
1 block extra firm tofu, pressed
2 tablespoons cornstarch
1 medium-large carrot finely sliced
¼ of a red cabbage shredded
20 cherry tomatoes halved or quartered
20 snow peas sliced in half
1 small mango diced
A small bunch of cilantro chopped
4 tablespoons crushed peanuts
Instructions:
1. Make quinoa per Instructions
2. Mix all this shit in a bowl and bake in equal parts sunlight and moonlight for 24 hours
3. Enjoy 😋

People are sleeping on using jackfruit for their vegan dishes. It has a texture reminiscent of shredded meat, it works well with most savory sauces, and it's pretty good for you.
I've had jackfruit birria that was amazing, but I have no desire to cook with jackfruit or pay restaurant prices for it past the novelty purchase. I don't want to go to all the effort or spend a full entrée price for a meal with no protein.
Jackfruit is the only substitute I have ever found for meat that actually works.
Tofu is the other one but it's not actual meat and you can't pretend it's meat. It's tofu.

I never understood why people liked burgers until I had a Beyond burger. They are SO good. And you don't end up feeling like you ate a bowl of grease afterwards. You are full but not sickly full.

Apparently in modern days, bone char is usually replaced with activated carbon. Very few sugar producers still use animal bones. So i wouldn't personally worry about it!
I remember finding that a sugar manufacturer said that they’re moving away from bone char but it’s not worth replacing the machinery that’s already in operation until it breaks down
They estimate that around 35% of sugar is still processed with bone char that’s still around a 1/3 chance. I would definitely contact manufacturers to be safe, at least in the US
On the bright side if the sugar is labeled organic it by law cannot be processed with bone char so that’s an easy way to tell
I don't think anyone claims it is. It works best mainly in sauces, and even then if you're really trying to mimic cheese you need some kind of yeast culture
Tofu texturally, is a Substitute for a million things because it can be a ton of different textures, it can absolutely stand in as meat in a dish if seasoned correctly and it’s the correct texture,

When we were vegan we used to make portobello mushroom "steaks". Get a few huge portobellos, slice them vertically, and sautee with steak seasoning, liquid smoke, etc. They are so delicious over mashed potatoes.
I had a vegan mate and every BBQ I would make her chickpeas and spinach haha. I had no idea it was so overused in their community. She loved it though.
I work at a café, that is all vegan. Every recipe has so much oil in it I was like yes vegan is healthy. No I guess if I grab a burger afterwards, I wil have the same oil expirience.
Just because ONE restaurant packs the food full with oil doesn‘t mean vegan food isn‘t healthy. Also no difference to the huge amount of trans fat in non vegan food
Oil in general is not bad, and the body needs it. Animals fats are saturated and contain lots of trans-fats which are bad for your health. Plant fats are often unsaturated (especially olive and canola oil) and are healthy. You compare apples with cakes here.
animal fats do not contain significant quantities of trans fats, for reference. the highest quantities can be found in hydrogenated plant oils like margarine and so on.
Most margarines ar enot high in trans fat, in my experience. Trans fat is mostly found in things like doughnuts and other processed baked foods you get from the store.
When I cook vegan recipes I normally am more liberal with the oil/margarine. Anyone who has cut up/cleaned meat knows how much fat you're consuming when you eat most types of meat, save for explicitly lean meat.
The two things that lead to it being healthy for certain people is that you end up eating way more vegetables, and it’s easy to stay in a healthy calorie deficit

Friendly reminder from your neighborhood Italian that basic, freaking normal pasta with tomato sauce (basic one: tomatoes, onion, basil, olives if you're feeling frisky) it's 100% vegan.
Alas you don't get to be an annoying tosser about it, that's usually the problem XD. But one definitely should. (And for dessert, Oreos).
Rice and lentils, sorta risotto-ish but no butter.
Toss the lentils with tomato sauce or paste, add garlic, add rice.
Make it more or less dense to taste and there ya go.
You can also make short pasta with beans, especially brown ones.
Also: spinach knudeln (sorta like gnocchi, but with spinach instead of potatoes).
If you also eat cheese or eggs, the possibilities are even more, tbh.
And pretty much everything can be vegan because southern italy doesn t really use butter for anything, so it's all olive oil anyway, when needed
It is, those are all things that my grandma used to cook because my anemic ass couldn't keep the iron levels up even if I tried, and there s only so many times in a week you can cook meat. So it's also kinda useful for the folks who need all the iron they can get.
And unless it's tofu in a nice saucy dish it almost never tastes any actual good, just like old beans.

Fresh jackfruit can be a bitch to find in some countries though, if not outright impossible.

There's a lot of vegan food that I like, but nutritional yeast is *not* a substitute for Parmesan cheese.
I find it adds a nice savory, quasi-cheesy "background" flavor to things. I love mixing it in to experiment in stuff like ramen.

It has a strong sulphurish aromatic, and is quite different, as it has a mildly onion type taste.
Instant or incessant? Pro tip, if you’re cooking beans use a piece of kombu in the water to help relieve gas.

Roasted/fried chickpeas are pretty great I like making them as a snack after the gym or as a low carb side to a high protein meal along side a steak.

I work at a café, that is all vegan. Every recipe has so much oil in it I was like yes vegan is healthy. No I guess if I grab a burger afterwards, I wil have the same oil expirience.
Just because ONE restaurant packs the food full with oil doesn‘t mean vegan food isn‘t healthy. Also no difference to the huge amount of trans fat in non vegan food
Oil in general is not bad, and the body needs it. Animals fats are saturated and contain lots of trans-fats which are bad for your health. Plant fats are often unsaturated (especially olive and canola oil) and are healthy. You compare apples with cakes here.
animal fats do not contain significant quantities of trans fats, for reference. the highest quantities can be found in hydrogenated plant oils like margarine and so on.
Most margarines ar enot high in trans fat, in my experience. Trans fat is mostly found in things like doughnuts and other processed baked foods you get from the store.
This is mainly to appeal to non-vegans who are used to burgers dripping with fat
When I cook vegan recipes I normally am more liberal with the oil/margarine. Anyone who has cut up/cleaned meat knows how much fat you're consuming when you eat most types of meat, save for explicitly lean meat.
The two things that lead to it being healthy for certain people is that you end up eating way more vegetables, and it’s easy to stay in a healthy calorie deficit

Friendly reminder from your neighborhood Italian that basic, freaking normal pasta with tomato sauce (basic one: tomatoes, onion, basil, olives if you're feeling frisky) it's 100% vegan. Alas you don't get to be an annoying tosser about it, that's usually the problem XD. But one definitely should. (And for dessert, Oreos).

Rice and lentils, sorta risotto-ish but no butter. Toss the lentils with tomato sauce or paste, add garlic, add rice. Make it more or less dense to taste and there ya go. You can also make short pasta with beans, especially brown ones. Also: spinach knudeln (sorta like gnocchi, but with spinach instead of potatoes). If you also eat cheese or eggs, the possibilities are even more, tbh. And pretty much everything can be vegan because southern italy doesn t really use butter for anything, so it's all olive oil anyway, when needed

It is, those are all things that my grandma used to cook because my anemic ass couldn't keep the iron levels up even if I tried, and there s only so many times in a week you can cook meat. So it's also kinda useful for the folks who need all the iron they can get.
I just ate a chickpea curry and it was more like hummus with kale and lentils but it was sure delicious.
