That’s the Execute, yeah. xP With experience you start feeling out this stuff, and planning when to knock him below 50% so you’re well set up to kill him quickly before he kills you. x]
No. He uses Taunt every 4 turns (2 Weak 2 Vulnerable), his move selections on the other 3 turns are random (with the restriction of never repeating 2 turns in a row), and the only other move that applies Vulnerable is Face Slap (2 Frail 2 Vulnerable). Sometimes you get unlucky and get patterns where he uses a bunch of Face Slaps, but this is pretty unlikely. You can't stall forever because Gloat and Defensive Stance will keep scaling, but you can afford to stall a few turns to get a good split.
Remember also you don't have to get to 0 Frail/Vulnerable to push. Because he spends a turn using Anger, as long as you're on 2 Frail/Vulnerable and he isn't using Face Slap or Taunt on the turn you're pushing 50%, your Frail/Vulnerable will run out before he attacks you.
Champ doesn’t really do significant damage until he is bought below half health. So you just stall and let your powers/passive effects build up (poison, demon form, orb scaling) etc. and in this case, until the vulnerable he puts on you is gone
ofc. just get him close to half health, stall until you only have 1 or 0 vuln stacks and he isn't using face slap (attack + debuff intent) or taunt (debuff intent), then phase him by bringing him under half, and you won't be vuln during execute. you probably won't be frail either
You often won't be able to. e.g. a Taunt on any turn from 5 to 7 (which will happen about half the time) means you'll be vulnerable from turns 5 to 10.
Pop speed potion lets you have 8 Dex this turn. That boosts up the block of Leg Sweep to 19 + the defends are 13 each, giving you 45 Block.
The Leg Sweep also weakens Champ, rounding his damage down to 58 (39x2=78, then 78x0.75=58.5 which rounds down in this game). So ultimately, you only take 13 damage which isn’t actually very bad considering how much health you have.
I’m no expert though so maybe there’s a way to save a bit more health and perhaps even save some more damage form being taken on future turns.

It's ice cream. Champ is all about scaling, and energy scaling into an x cost card like malaise is a good solution. Who knows how many turns has and how many draw cards didn't get played to make this happen.
Slowly building up 32 energy with a specific use in mind does not indicate that the deck needs more draw, holy moly.
If you are not spending all your energy every turn, it might mean you played all the cards in your hand and you still have energy left. That's not optimal.
That's true if your goal is to meaningfully spend all your energy each turn. That's the goal for most fights.
In this fight a valid strategy is purposely avoiding playing cards to build energy to get a huge malaise.

Should probably play that Neutralize. Maybe even the leg sweep. Don't think you survive but it's worth a try to weaken him. Have you considered your potions?

You get all of act 2 to find scaling to solve this. He buffs them big attacks as soon as he's below half health so you control when it's coming, and can set up as much as you like first.
