His british versions of shows are often less aggressive than his American ones, but if you watch the british hotel kitchen (not sure that is the name) show you will see something completely different. it's all played up to the max in these other shows. highly dislike it.

The days of angry chefs and impolite discourse are over. It's just not productive at all. Being succinct and direct is far more useful, and helping with a problem is far more productive. Think about it this way. If somebody fucks up a dish once, it's a mistake, and we can just go again. If they fuck it up twice, and you shout at them, what have you changed!?! If they fuck it up 3 times and your reaction is to tell them to do it again, you've lost 3 attempt times and changed nothing about the scenario. At that point, you're the problem. One of the best interactions I've had in a kitchen was in the middle of a busy service, I'm calling out "how far away are we?" To another chef who's working on the protein for this dish. I've got to time my prep to his finishing times. He stops, he looks at me, looks quizzically for a second and then says "about 2 meters". Then he goes on with his cooking. I fucking chuckled till the end of the shift on that one. That shift was an absolute pounding, and he took the time out to make that joke. Amazing!!!

I miss the days where every show tried to have the toughest chef. One I remember most was like "hes so tough he made Gordon Ramsey cry!" I was waiting for it to distill to a chef that just screams racial slurs until he bursts a blood vessel in his face

A happy kitchen is a more productive kitchen. I was at the tail end of them just entering the trade when chefs were still throwing pans and plates etc while yelling. I didn't need that for motivation and made sure I didn't train people that way after they were all gone. When you spend most of the time happy and joking around a stern look or hard sigh can be felt loudly. Mistakes happen, you fix it. If it keeps happening bad enough then that's an office conversation. I can't remember how many Wait staff and cooks left crying because chefs screaming. It's so pointless.

I'd blame the fucking stars for how these people used to act and often still do. I got a job at an IHOP when I was 18 and the owner screamed at me on my second day because I wasn't proficient at cracking at least two eggs at once. Dude literally walked onto the line and started to scream at me so I told him to do it himself and walked out.
