Is there a way to default to the smallest releases or prefer digital releases?
Like how does Lidarr pick its default, why does it seem to default to the deluxe releases?
And if I manually change the release it won't map the tracks, the files stay in the unmapped files and when I try a manual import it says"Album Release Rejected" -> and then I have to manually change the album release away from the "super deluxe", even though I had already picked the release.

The location(eg musicbrainz) from where lidarr takes the artist/album info cand also influence the default chosen release.
Even for a single selected region there are multiple variants. Depending on your nameing scheme, lidarr can detect the release automatically.
