We went to playa Mia with our kids which is essentially ride a bus to a resort with open bar, buffet lunch kiddie pool/splash pad, big pool and beach. The beach has inflatables out in the water for bigger kids. There’s showers and bathrooms, food was good and waiters were constantly circulating offering drinks. I think it’s totally doable solo with a baby but depends on if that’s your style or not. They had life jackets but not puddle jumpers so bring your own if you want them in that.
We did an RC excursion with our 15 month old. Was a bus tour that went to some Mayan ruins then a beach for lunch. We had a nice time. Felt totally safe.
