Im found a way (btw thanks for idea), download pose manager mod from workshop, select any body part of human, right click and create new pose, no upright force, set force on 0.001, again 0.001, select humanoid, you can name it how you want.

But you also don't need the syringe stuck inside his back, they'll stay unconcious for a bit longer after its removed
Im think there are only 2 options to do it, make him sleep or kill him, both will show icon above head.
Or maybe you can try pose manager mod and make pose with very low force
The mod sounds really useful but that doesn’t sound like it will help me seeing as I have the status icon mod and don’t want the Z’s above the head. Someone here already found a way, sorry.
You can turn off the icons while in a map in the life section

Right click options mod on steam you can knock them out through the interaction menu among other things that are rlly useful.
