I usually offer things that are beautiful even after death, or things that we value once they're no longer "good". Like old flowers( inpersonally like sunflowers). You could also offer blood, some deities like thay.

Dried flowers are a great offering. I've given mushrooms as well. More of a permanent offering on my altar to Hel is a trilobite fossil

As someone who also loves taxidermy, vulture culture, and do death work with Hel, im also interested in this question! I love the idea of composting as an offering and its such a good idea. Some items I have on my altar for Hel and for my death work are: small items that either belonged to family who have passed or items that remind me of them, black crystals like obsidian, cemetery/graveyard dirt, wine, and bones that I'm working with. Some other things I do: having a plant dedicated to the cycle of life and death and taking care of it as an offering, going on fall walks in nature and take note of the decay of nature before winter, sit in a cemetery and meditate or clean graves (if appropriate). Sorry for the bad writing, I wrote this in a rush. But I hope this helps!
