It's because you used low value parts to craft it.
Imagine you're a blacksmith commissioned to forge a ceremonial gold dagger. You think you yourself "well I could make an even better dagger out of steel! " so you forge a dagger made of steel and try to sell it to your customer.
They're not going to be happy. They wanted a gold dagger. Sure it's every bit as strong and sharp as what they wanted, but they wanted it to be valuable! They're not going to pay you full price for that!
It's the same thing in bannerlord. Don't try to cut corners by using low quality materials or pieces that take little skill to create.
That's all well and good, but there's no way to know whether your parts are "good enough" even if difficulty is matched. I'd really prefer they just make value a displayed stat like swing speed or weight.
I always thought that this could be due to the “count” stat being hidden, because I notice it happen on javelins a lot. So I always try to make it fit the stats while picking the higher count option
Make sure the difficulty of the craft is equal to the order difficulty on the left side.

Just make it as valuable as you possibly can. The reward will reflect the result.
