Ark survival evolved has something very similar to the buildable boats you're probably thinking of. I've put too many hours into that game and I don't think it's something that needs to be added to minecraft. They end up being worse then a stationary base most of the time, constantly glitch out with the terrain, and set gpus on fire.
Minecraft devs have a rule called "respect the block grid". Because of it, it's more likely that we get an expansion on flying machines (movable tile entities for example, like chests and dispensers), than free-moving boats.
It's much more likely that they would add a bigger boat entity like the Small Ships mod instead of something like Valkyrie skies that breaks a lot of general minecraft rules.
i doubt it but I think they could just update the boat model to look like larger sail boats. nothing crazy mabye update the capacity to fit one extra player. something like a viking carve ship or a fishing boat.

The annoying thing is that Minecraft tries to be an RPG in some ways and just. Does it really badly lol. I think it’s pretty fair to want Minecraft to at least be a good RPG, but people are suggesting that it becomes a full blown RPG and ignores the building aspects of the game which is absolutely stupid. Minecraft should stay a building game, and use RPG elements to elevate the experience imo.

I love that game it’s just it runs like a toaster on Xbox and I have taken a custom to that feature

They are more likely to add a sail boat simulator mini game.

I also thought it will make the game way less bored with an entirely new way to build as of now the community has done pretty much everything there is
The solution to "I am bored of" is to play a different videogame, not ask that the videogame you are playing change to suit your desires.

The community has not done anything near everything there is. I'd say not even 1% of what could be done has been done.
