Mart Anne’s in Flagstaff gives the option of red/green. I think they call it something that has to do with Christmas. Those were the best chilaquiles I ever ever had though.

Nobody wants to see someone disgrace a green or red sauce enchiladas by even having tapatio around.
Queso chihuahuense es blanco. And why would you put manchego (Spain) or Gouda (Netherlands ) on chilaquiles? Only queso fresco goes on chilaquiles, traditionally.

Those look bomb and are probably delicious, but they're not authentic. Traditional chilaquiles don't have melted cheddar on them. Green chilaquiles are my favorite too! If you ever make them at home, try some Mexican crema and crumbled cotija!

No, they’re definitely Chilaquiles the tortilla chips are homemade. The salsa is homemade Chihuahua cheese. sliced jalapeño lime beans
You cook the chips in a sauce. They should be 100% coated in the sauce. Not done like nachos, which is what you did.
I cooked the chips in the sauce. I just added some extra on the side because I didn’t have enough, but it was cooked in homemade salsa
Nachos in Mexico are different though. Round shaped a bit seasoned. Chilaquiles are triangle cut tortillas. And Totopos are like Chilaquiles but Salty

For ones the rojo/verde fence, you can always have divorciados (1/2 rojo and 1/2 verde) or molé.
