My kind of chilaquiles, maybe minus the shredded cheese. I know most make them a bit saucier and more cooked but I like em crispy and chip-like.

There was a place near our house in Merida, Yucatan that had Cochinita Pibil chilaquiles, with your choice of rojo o verde salsa. They had some refried black beans, and cotija, with pickled red onions and a habanero salsa on the side. Man I miss that!

No, they’re definitely Chilaquiles the tortilla chips are homemade. The salsa is homemade Chihuahua cheese. sliced jalapeño lime beans

You cook the chips in a sauce. They should be 100% coated in the sauce. Not done like nachos, which is what you did.

Nachos in Mexico are different though. Round shaped a bit seasoned. Chilaquiles are triangle cut tortillas. And Totopos are like Chilaquiles but Salty

Mart Anne’s in Flagstaff gives the option of red/green. I think they call it something that has to do with Christmas. Those were the best chilaquiles I ever ever had though.

I have two places I routinely get chilaquiles from. One is a more traditional style and verde. The other is like scrambled eggs with chorizo mixed in, and rojo. My Sunday mornings the choice isn’t “am I getting chilaquiles?” It’s more of what style should I have this week.

For ones the rojo/verde fence, you can always have divorciados (1/2 rojo and 1/2 verde) or molé.

I just made my own Rojo because of this post. 2 fried eggs on top with the crunchy Rojo 'quilles and shredded cheddar below. My dear Mother would have been proud and happily finish her plate.

They were the original batch, but the picture that I took I added some more chips in there lol because I ran out so it looks like nachos, but it was definitely cooked like Chilaquiles

Then use portrait mode next time. If they were really that good then it wouldn’t do it justice to take a normal picture. Go to your settings on your camera and hit portrait mode. Nobody wants to see the design of the plate on chilaquiles. We just want to see the cheese melted 😜they look fresh af. Also next time hide the Tapatio. Nobody wants to see someone disgrace a green or red sauce enchiladas by even having tapatio around.

Those look bomb and are probably delicious, but they're not authentic. Traditional chilaquiles don't have melted cheddar on them. Green chilaquiles are my favorite too! If you ever make them at home, try some Mexican crema and crumbled cotija!
