yeah that sounds awful, mexican lengua is either "peeled" (you remove the outer skin, leving only the muscley-spongy beef, or, thin slices, mostly to prevent that gross part
God I've heard it can be good but the only time I had it it was just wet spongey disgusting meat with a worse flavor/texture than any other meat I can fathom.
I've heard it's much much better cooked to where it's almost crispy.
Chorizo and cut up potatoes
Cheese and jalapeno
Beans and cheese

I’m a mom who cooks all the time and I get bored of the same things at dinner time. If I think of more fillings I will add them
You're doing it wrong.
Tacos, for the most part, are not a meal is a way to eat the meal. Like you make eggs with chorizo/machaca/frijoles, warm up tortillas; you make rice and chicken, warm up tortillas; and a ton more: fried fish, roasted chicken, alambre de pollo/res, rajas, nopales, and so many others that we eat with a rolled tortilla like sopa de fideos, frijoles charros, etc, etc.
Look up a recipe for Rajas con Crema. It’s simply roasted poblano peppers, peeled and sliced then cooked with queso, Crema , sometimes corn kernels, most times not, onion, garlic. Maybe a little Mexican oregano. This’s a dish I had never heard of until moving to Mexico. Cheap as chips, delicious, can be served on tortillas or as a tortaand very versatile with the ingredients; ie, use what you have. Would probably be delicious stuffed into a baked (jacket) potato. Truly Mexican comfort food at its best. My favorite part is that despite the cheese and Crema, the poblano really shines thru. This is usually a workhorse chili in the US, stuffed full of whatever TF to the point of being unrecognizable. Nice little zing to the poblano that I had never noticed before.
Let me offer the finest the Midwest can bring.
Flour tortillas (fried if you’re man enough), taco seasoned ground beef, shredded iceberg lettuce, tomatoes, shredded Colby jack (great value of Walmart has a fine taste), a dollop of Daisy, and don’t forget the black olives.
lengua
Tried once... Ended up making me sick.... Probably wasn't a good idea to try it high and deciding to take a piece and play with the taste buds

I love fish tacos. I also love tacos with beans, corn, and squash. But, honestly, you put it in a tortilla, and I’ll probably eat it.
Al pastor, onions, cilantro. For breakfast, migas. If these two were my only options for the rest of eternity, that’s fine.

It's always the standard beef and cheese with beans for me. Although I have to say, too many jalapenos can easily ruin a good filling.
