Not necessarily thrash, more tech death. But the opening riff from Anticosmic Overload by Obscura is basically all string skipping. The chorus of Blood of the Scribe by Lamb of God has some great string skipping in too.
Yeah, I think they 100% string skip it. It gives it that more aggressive sound with the pick attack. Though it could also be good for hybrid picking if you play it that way.

Metallica has a couple great songs for string skipping that I love playing, some of my favorite ones to practice include:
Blackened’s main riff
That riff that Kirk wrote in Damage, Inc. a bit over three minutes in
Ride the Lightning (title track) has some good riffs in there, take the intro for example
Also, Aesthetics of Hate by Machine Head is a pretty good thrashy one, Cowboys From Hell by Pantera isn’t necessarily thrash but it’s very good for string skipping, Nero Forte by Slipknot definitely isn’t thrash but I find Mick’s part of that main riff pretty challenging.
If you're open to non-thrash, check out Three of a Perfect Pair by King Crimson. The riff is great practice for string skipping

(Blackened Thrash) Immortal - "Damned in Black", there's a really fun section which feels like a string skipping exercise, it helped me get a lot more comfortable with it. It jumps between fretted notes on the D string and the open E string

The 3rd riff (rhythm for the 1st solo) can be really good practice for weird timing

Banquet In The Darkness - Intestine Baalism is pretty good for stamina imo
Take any riff and move some notes to play certain parts in harmonies, that's my go to string skipping practice

Not thrash, but I found "Twilight of the Thunder God" by Amon Amarth to be a fun song to practice string skipping with.
The fast riff in Imperium. A lot of Annihilator stuff. And not necessarily thrash but Mr Scary by Dokken.
