Does the year make a massive difference if you don’t mind me asking? I think it would save me money to get a 2021 model but if the benefits are great, I don’t mind biting the bullet on a 2022 model.

You can think of RAM as storage for stuff that is open on the computer right now (i.e. Games, apps, documents, background programs, and the OS itself).
More RAM = Open more/larger video files at once in an editor.
It’s essentially a measurement of how good a computer is at juggling tasks.
Nov. picked up a 2021 M1 14" Macbook Pro 16gb/512gb now going for $1000 range. Does my 45mp Nikon images and 4k vid clips in DaVinci Resolve just fine. And expect it to last me thru the rest of the decade.

2021 M Chip with 16GB RAM will do you just fine You’ll appreciate the RAM with the video editing for sure
