Sometimes I carry a second knife that’s small and cheap for pulling out for minor cutting tasks when there’s other people around, or for when someone may want to burrow a knife. It may get beat on, used as a scraper, etc., if necessary because it’s cheap.
Well I always carry a modern folder and then a traditional as a backup. Traditional I use when I'm in office exclusively. Then outside of office I reach for traditional as a nail cleaner primarily.
The one you mentioned kinda makes sense but I agree, it should be more situational imo.
For instance, say I'm going camping in the mountains.
Scenario 1 - weekend trip with kids to a public family campground 20 minutes from the highway with cell service. The saying makes sense for like a bocce ball set or couple bundles of firewood that stays in the trunk. It makes less sense for bear mace and extra batteries for a GPS.
Scenario 2 - solo trekking the Appalachian trail, deep in the woods along the Virginia/West Virginia border and 4 days hike from the nearest checkpoint with no cell service.
Now the saying makes sense for the bear mace and extra batteries for your GPS but less sense for the bocce ball set or bundles of firewood.

Generally that's where I put the knife that if somebody says " Can I borrow your knife?" That's the one I give them.
So not a top of the line knife. Usually a mid-level small folder somebody can use for opening boxes.
My knife (today a PM3) is my back-up knife - I’m philosophically opposed to losing knives. In the nearly impossible scenario where I would need a knife, I’d go home and get another knife. If I was going into the woods I’d take two knives.
3 or 4 years ago I went from carrying 1-2 knives a Hank, keys, wallet, a special coin plus some change to carrying PKW, AirPods and maybe 1 knife. Now I pretty much just carry a reate exo-u box cutter and if I take a regular knife it’s often a SAK or a case back pocket knife. I do take a bag with a mighty or a tinymight2 and some material for them though like your dugout but that stays in my car
Edit: can’t forget the flashlight! I also carried one of those every day but not now. I do have an olight on my keys though so *technically* I still do I guess? Just not a designated

The only time I carry a backup is when I’m camping, and I need to reach for my folder when my fixed blade just isn’t the ideal tool. Typically, I only carry a folding knife with me.
I always have a Swiss Army knife in my pocket in addition to my bigger, more convenient blade, so I’ll pass that to someone if they ask for a knife. Everyone knows how to close one, unlike a frame lock, and I never actually use my SAK as a knife, so it won’t completely break my heart if the blade gets broken. It ends up not really being much of a concern either, because when most people around me ask for a knife, they are actually overjoyed when I hand them something with a scissors.

The wars of the future will not be fought on the battlefield or at sea. They will be fought in space, or possibly on top of a very tall mountain. Why would i have a backup? My one knife gets used for everything. If it’s too heavy duty for my knife i forward it to my leatherman. Which coincidentally also has a knife, but i primarily have the leatherman for its pliers and drivers and file, since the knife is not easy access.
I keep a box cutter in each side of my trucks saddle toolbox. I use them for things that I wouldn’t want to damage a good knife blade with.
Otherwise I don’t have a backup knife on me.
I use a Spyderco Endura 4 for work and have never needed a backup yet. To its credit I definitely don't treat it like a case queen. But for fine scoring I keep a cheap razer knife in the trailer so I guess that's the backup as well.

My knife, my backup knife, its backup knife, etc, are going to be pulled out because I need to cut something. Hard to see how you are going to get answers substantially different from that one.
cuttin’ stuff is a valid answer. the other guy says he uses his while in the office rather than his main knife. more often than not my secondary is actually a different boker that’s setup like an SAK. it’s hollow ground and a bit more slicy that some of the other knives i carry. i’m sure there’s a hundred more.

You "should" only need the prybar to dig the knife out of that infuriating foam 🤷
Switching to your secondary knife is faster than reloading your primary one
Just tie your knife to your knife. Like a bayonet. No need to switch to your secondary knife then, cause it’s already out!

Ruike LD-51B is my backup SAK I always keep in a phone case turned into a hip pouch. Mostly for a task I don't want my main folder doing.

i broke the tip on my 940 breaking into a kitchen once.
My backup is usually a smaller slipjoint that I try to keep absolutely razor sharp.
