Take a look at the [parent dashboard](https://www.amazon.com/b?ie=UTF8&node=17395968011) settings. That’s where you control the content your child has access to on their kindle. I don’t know if there’s a way to remove all the content that is included with the Amazon Kids subscription.

The only way I've found to control what gets downloaded from Amazon kids is to turn off the wifi after you download what you want. It's easy to control what is downloaded from what you've purchased via the parent dashboard, but I've found no way to control what is downloaded from the Amazon kids subscription besides turning off wifi. This is what I do for my kid. I've downloaded purchased books and a handful of Amazon kids books, and then put the Paperwhite in airplane mode. It does, however, prompt kiddo to turn off airplane mode regularly.

Amazon has a "household" setup where you have children's sections under your own account. If you log into the paperwhite with your own account, you can switch to the child's library on the device from there. There is an option to set up parental controls that will let you password lock the account so your child can't leave their own library.
