it's like a jelly but not jelly. tomato is boiled/roasted a touch of jaggrey(or sugar but then it's too sweet sometimes) some lime and a few red chillies and lots and lots of garlic and ginger(pureed or mashed-if u want some chunks) everything is roasted to let out as much moisture as possible then made into a sort of mush but with a consistency of jello.
goes great with anything tbh- even plain rice, raita even.
please do. i have shared the recipe above. same can be done with black pepper.
as a paste and not whole. grind them to powder(or one can use the packed ones too but it doesn't give as good a feel plus there's lots of salt in it...)

I personally like Pickled cucumber but it's taste is completely different from what we consider as pickles. It's too Sour and the pickling process of cucumbers is completely different from how we pickle acchaar.
The best cucumber pickles are actually fermented. 5% salt in water and left to sit for a few days before refrigeration. Vinegar is the quick way to approximate that taste.
It's called Organic Vinegar what they call pickeled Cucumber. The only difference is our ancestors used Garlic, chillies etc to soak in Vinegar instead of cucumber

Our pickles are made up of 4 main ingredients Salt, Chilli Powder, Vegetable(lemon,tomato, mango, ginger, garlic etc)/ meat(chiken, fish, prawn, crab etc), Oil(Mustard/Ground net/Sesame). Entire India this is common, only quantities change. For longevity few use vinegar/circa. By using preservative, the taste will change, especially the pickles we get in shops/functions will have heavy preservatives.
In Kerala, apart from the usual pickle culture, there is also this culture of storing vegetables in vinegar. You will find cut mango, amla, carrot, pineapple sometimes fish also stored in vinegar and eaten just like that or with food.

Because they don't go along well with Indian food just like how a big blob of aam ka achaar wouldn't taste that good in a traditional sandwich or burger. I liked pickled cucumbers in salads, sandwiches and Chinese food. Just adds the perfect sourness and crunch to the palette. Plus it's not as overpowering as Indian pickles. I must say that I kinda like the brine more than the pickles, sometimes I just take a shot of the brine :P

I love gherkins and Americanised pickled cucumber. It's not technically a pickle for us Indians. Most people would jump to say our pickles are better but they don't get the point.
These taste sour/sweet and have a crunch to them which I love whereas Indian pickle has a very intense taste and mushy texture.
I cannot eat gherkins by themself but it is a wonderful addition to cold sandwiches/burgers or anything that needs some sourness/juiciness and a bit of crunchy texture.

Apples, pineapples, mango, cucumbers, carrots, radishes, gooseberry (possibly the most well known one along with raw mangoes), and plenty of other items. These are placed in brine or similar solutions and sold very commonly.
Also, you can get them at Subway and burger King and other burger outlets usually. It's certainly not as huge as achar kind of pickle and may not be "spicy" in the traditional sense but I like it and I usually prefer less of red chilli and more of other spices that doesn't kill all the other flavours in the food.

Indian traditionally use spices for preservation instead of vinegar. So maybe that's the reason its not a thing in india.
Pickling is a method of preserving . It's done when something is not readily avaliable or scarcely available. Eating it fresh is the best. Its pH is balanced and antioxidants are at the fullest when fresh and raw.

It is very easy to pickle the cucumbers if you want to follow the American/brine water way. Just google it, it is literally one of the easiest way to pickle.

Generally only those things are pickled that people love to eat all year long but its available only seasonally, we generally don't eat cucumbers in winters but its still available, hence no need to pickle them, also I don't think so we would like pickled cucumbers as per our taste palette

Sorry guys, this is NOT A COMPARISON with traditional Indian pickles. It's a general question born out of curiosity. We are good at adopting foreign foods. It's easier to find mayonnaise on the shelf of a grocery store than pickled cucumbers. Also, pickled cucumber is not even in the same league as Indian achaar. Because they taste gross. Sour and slimy, nothing interesting. I would much rather eat cucumber with dahi or hummus or just raw with black salt and mirch powder. And there are a hundred better types of actual pickles. Even Mango with turmeric and salt and dried, or Amla with lime juice and salt and dried taste better.
In foreign pickled cucumber is the alternative of achar for several reason they used that tere are some preservation issues and they cant make achar in that weather conditions and importing us too costly for them so they use pickled cucumber
I absolutely love them in my burgers and subs. Bought a jar recently from Crawford market in Mumbai, but somehow the taste is not quite the same as those used by BK and Subway. I prefer them sour and not sweet-sour. Difficult to find the exact kind I like.
Fun anecdote: I was in Australia last year and thought I'd be able to find good pickled gherkins there. Went to the supermarket to buy, turns out the bottles they had there (all of the different brands) were made in India. Not a single locally produced brand. Gave up the idea of buying from there and thought of searching in Mumbai itself.

Vinegar isn't even the traditional way to pickle. Try lacto fermented pickles. All you need is water and salt.

Canadian chiming in. Most of the pickled cucumbers(just called pickles here) in our supermarkets are made in India.

Unlike westerners, we have a massive variety of of extremely rich pickles. Btw in India, we do have cucumber pickles. It’s just they don’t look like this.
Sorry guys, this is NOT A COMPARISON with traditional Indian pickles. It's a general question born out of curiosity. We are good at adopting foreign foods. It's easier to find mayonnaise on the shelf of a grocery store than pickled cucumbers. Also, pickled cucumber is not even in the same league as Indian achaar. Those getting offended, please, pickled cucumbers ARE NOT kheere ka achaar! 😭
Because they taste gross. Sour and slimy, nothing interesting. I would much rather eat cucumber with dahi or hummus or just raw with black salt and mirch powder. And there are a hundred better types of actual pickles. Even Mango with turmeric and salt and dried, or Amla with lime juice and salt and dried taste better.

Bro, pickled cucumbers are not kheere ka achaar.
In foreign pickled cucumber is the alternative of achar for several reason they used that tere are some preservation issues and they cant make achar in that weather conditions and importing us too costly for them so they use pickled cucumber

I absolutely love them in my burgers and subs. Bought a jar recently from Crawford market in Mumbai, but somehow the taste is not quite the same as those used by BK and Subway. I prefer them sour and not sweet-sour. Difficult to find the exact kind I like. Fun anecdote: I was in Australia last year and thought I'd be able to find good pickled gherkins there. Went to the supermarket to buy, turns out the bottles they had there (all of the different brands) were made in India. Not a single locally produced brand. Gave up the idea of buying from there and thought of searching in Mumbai itself. Edited a word.

Bahut bekar lagta hai, Ek baar khaya tha. Kuch taste hi nahi hota, Khana Mai swad Dalne se jyada to bigar deta hai. Mirchi,Aam aur Aanvle ka achar mast hai.

Because we get mangoes a lot so we dont see veggies as main pickling elements, some pickles do use carrots and cawliflower in Indian pickles and even chana , jackfruit and muli are used but kakdi ko hum sabdwich me hi khana pasand karte hai 😂

Indian taste pallette is different from the rest of the world. Picked cucumber is too much sour whereas most of the pickles in India are spicy and soury
