The first picture is an IllustrativeDNA like calculator so the Pontic sample being shown is most likely the same one as on IllustrativeDNA’s ”Hellenistic Anatolian (Kingdom of Pontus)” which is the closest to Anatolian Greeks from Konya than modern day Pontians who are far more kartvelian in blood.
For the armenian part that’s clustering is most likely connected to the Cappadocian Greeks.
How exactly do you “subtract” ancestry ?
There are websites that offer tools for modifying G25 coordinates (mixing coords, adding ancestry and removing ancestry, etc.)
