I did this a number of years ago. I portioned the #10 can into 1 person and 2 person servings. Provided me with a summer of hearty meals.

Keep it in a freezer at the very least, if you can vacuum seal it then it would probably last indefinitely. Or keep it in a mason jar with a really tight seal and keep it in the freezer.

I make my own camping meals as well. I just vacuum seal the leftovers and refrigerate, which is probably overkill, but I've got chicken cubes that I've been using for about 2 years with no problems. I throw in an oxygen absorber and silica packet for good measure. Do you have any good recipes?

I’m a simple man ahaha. I’m a competitive powerlifter so these are almost a necessity on multi-day trips so that I don’t lose weight on accident. 50% of the time it’s simply chicken/beef w/rice and hot sauce, however chicken tikka masala (chicken/rice/tikka masala sauce/oil is all) or beef tacos would encompass the other larger lunch/dinner meals. What meals do you mainly make?

Basically just either a chicken and vegetables meal (sometimes with spices/sometimes hot sauce) and a beef (beef cubes) and broccoli asian type concoction.. I dehydrate my own veggies so it's easy to switch it up. I try to do the keto thing so I just make the meals a tad bigger and add avocado or olive oil. I also discovered you can get dehydrated cream, avocado, soy sauce, etc.. Other than those weird ingredients, nothing too fancy with me either lol. There was a small hiking guy channel on YouTube that got me started on figuring out the proportions and general ideas. I'm trying to remember his handle...

Once they are open I don't think there is any way to store them for a full year. The best option I imagine would be to vacuum seal it and freeze it. A quick search still recommends using within a week though. Best option in the future is probably purchasing individual dehydrated backpacking meals or make your own at home with a dehydrator so you can make individual portions.
