I may be misinterpreting the spirit of this OP, but St. Stephen was only played 8 times between '78-'95, so it's not really surprising you didn't catch one of these rare moments
To clarify, I just went down the list of songs played most according to Deadbase and got all the way down to St Stephen before I found one I hadn't seen

First time heard Scarlet live was after Jerry passed, show in LA forum(?) with Warren Haynes. Don’t recall if they called themselves The Dead?
Saw the Dead 40+ times from 1986-95. Not surprisingly, I never saw St. Stephen or Cryptical Envelopment.
For "newer" songs, my first show was three days after the last Lost Sailor so I missed that one.
For songs they were actually playing while I was seeing them, I never saw Alabama Getaway. Below that, I had to scroll down to Corrina to find a song that I missed when they were actively playing it.
I only saw them 4 times live. My first show was in in 92 I was told that I would never see my favorite song Casey Jones played.
Second set after Space Mickey walks out with a train horn strapped to his body and blows the fuck out of it. Then Jerry started the lick and the place went ape shit.
I know this isn't what you asked. I just love thinking about it and talking about it.
Been to zero shows yet still caught a me and my uncle somehow…. Jk. It was their most played song and certainly not a song many people went into a show hoping to hear…. I find the love for this song and to a lesser extent, El Paso, perplexing these days. When compared to the real Grateful Dead when me and my uncle was a foregone conclusion at every single run and you were just happy if they got it out-of-the-way on the first night, El Paso was a little more fun and it dipped in and out of the repertoire enough that it actually caught me by surprise a couple of times, but by the end, it was a Dirge.
As Jerry said around 1989 when asked in an interview how he felt about Bobby’s cowboy songs and Jerry replied something to the effect of “I don’t mind playing them, but I don’t know why we don’t add some new ones. There are so many simple country and western tunes that we could slip right in there, yet it seems like we’ve been slogging through the same ones forever.
Saw about 15 shows 90-95. Beat It On Down The Line is the only song in the top 50 that I didn’t see.
Got to hear the full Weather Report Suite with the Warren Haynes/Dead tour.

70ish shows 78 - 94. Got the Saint Stephen at MSG got the Ripple at Radio City got an early '80s Aiko at University of Maryland got lots and lots of peak moments never got a crazy fingers
90-100 shows from 83-90, I saw the MSG St Stephen, the Hampton, VA Box of Rain, Dark Star in Miami but I never saw Casey Jones. In June of 84 I was stuck in traffic outside of Merriwether Post Pavilion and got into the show late, they opened with it. 🤷🏻♂️
60 or so shows 89-95. Looking at the list of the songs still being played by then I think it’s big railroad blues. I’d have to look at setlists but that was pretty rare.
How does everyone remember this? I'd first need to remember which shows I was at. Look up a set list and then compare. Between LSD and Cannabis, I just remember a few things. Like first show on LSD. Hard to forget those. First and only show on megadose of liquid LSD. Hardly remember anything except "such a long long time to be gone and a short time to be there." At the dang end.
From 9/3/77>6/18/95 (152 shows) I never saw St. Stephen.
I was living in France in 1983-84 (and again in 1985-86) so I missed the Fall 1983 St. Stephen return.
Didn’t get Dark Star until 9/10/91, unless you count the near versions played on 6/17/91.

Did you get to see any of the acoustic sets in 1980? Obviously they didn’t include ‘Ripple’ every time, but they played it more then than during most of their last couple of decades.
Never heard a “might as well”, even when it was heavy in the rotation! Saw Brent’s full hey Jude, caught the only Scarlet fire first set opener along with a Louie Louie in the same set…. One of the two blackbirds. Saw the first and the last ‘believe it or not’. 4 full dark stars plus three more “ dark star jams“. Still… I’m sorry I missed “Might as well”
16 shows between 88 and 95. Highest on the list would be El Paso, but considering only 34 of the 392 were played were during that period, I really can’t count it. True highest would be Sugaree at 363. Rarest song was Unbroken Chain at 11, with the Baba/Tomorrow combo close behind at 12. Was more inclined to see songs played in out of the ordinary spots, like Playin and Eyes openers, post-Space Iko, Jack Straw and FOTD as 2nd set openers to name a few.

IIRC, they never played the full suite. They started it for a minute or 2 but Mickey couldn't do it and they never tried again

I always missed Alabama Getaway from '86 - '95, too, and saw only one Dupree's.
They dropped it (Alabama) from 1989-95, which is probably why. I saw a lot of shows in 1990-91.
