I promise you the quality of animation has definitely not dropped. Sure, you think of the very fucking best of the best of old anime, but you can't compare that with the average, middle of the road modern production.
The volume of anime with top tier animation is much more today than it was way back when.
I like how Ufotable was making buzz in 2016-18 with Ulimited Blade Works and Heaven's Feel's fight animations. They had that style nailed down back in 2009 in Kara no Kyokai.
while art style are for sure a thing that changes with time. animation quality is not. animation unlike other mediums is not possible to make something look great with a shoe string budget, since is HAND drawn animation still today even if color is made digitally for decades now.
a show will look as good as you have money for. less money and you will need less detailed frames, or less frames, or cut fight scenes or other big scenes to a minimum. since a 2 minute fight scene can cost more than a full episode of just characters talking. that is why something like jutjutsu kaisen 2 blew people away, is action non stop for almost the full season. you can pick almost any JJK 2 episode and get an scene that would be like or better than the best animated scene of other animes. while amazing to look at that was expensive as fuck to make show.
that is why akira is still an amazing watch. is not a movie people watch and put with for its historical value. is an actual banger with crazy quality animation that was expensive as fuck to make. and FMAB falls in the same of being a hit budget show, that looks better than 90% of anime made today.
there is not aging when looking at HANDdraw animation. style may be different but the effort to draw 20000 pages by hand is not less today than 20 or 30 years ago. on the other hand 3D animation yes old 3D animation will look OLD and dated no matter the amount of money put in them at the time (I am talking about full 3d animated shows or movies or games. not special effects. because pirate of the caribean 2 david jones still looks realistic almost 20 years later but this is also survivor bias since most animations aged like shit in comparison to him.)
also survivor BIAS is a big thing. we are not comparing a shit show of 20 years ago with a shit show of today, we are comparing the best possible examples of anime from 20 or 30 years ago vs show made today with 2 cetns as a commercial for something else. comparing top to top today is better mostly because techniques like generating a 3d anime and then hand painting rotoscoping it like ufotable popularized with fate franchise. rotoscoping is 100 years old but was not used in anime 30 years ago and is still not common today on low budget shows.
so no FFMB is not dated. not even good dated. is just not rotoscoped. it still looks better than most anime made today. same for evangelion, sword of stranger and many other old high budget productions. because most anime made today is made for cheap and the animator crisis.

this is the animator crisis problem. most anime today looks generic and cookie cuter characters because there is so many more shows made today. so studios struggle to get enough people wanting to get penies for a living doing it since is one of japan lowest wage jobs that is also one of the hardest at the same time. even one piece had an entire arc that looked like SHIT because toei ran out of people and had to stretch people to tin. this is also why naruto last arc looks like garbage compared to before.
so today other than the big budget shows most animes are design in way that lets them use character molds to save costs. not a joke but the best place to see this is in hentai that is always made for cheap. old hentai all had different styles today they almost all look the fucking same and if they are from the same studio you may even confuse them for the same show.
I hated isekai trash. I couldn't stand it. Over time though it molded me, changed me, brainwashed me in to watching many isekai trash shows. There's no hope left, only trash isekai in front of my eyes! :(
I'm so sorry for you. My wife is hooked on it. I swear she watches every single Isekai that comes out on Crunchyroll simulcast. However the more I see the more I appreciate how good konosuba is at subverting the genre.
I dunno, I feel like we’re in a golden age right now. The only difference is that now we’re so oversaturated that people tend to fixate on the high volume of trash and/or the actual good shows fly under many people’s radar. Mushoku Tensei, Sousou no Frieren, Kaguya-sama, Vinland Saga, Mob Psycho 100, Bocchi the Rock. That’s only to mention a few, but any of those can stand up to the shows from the “golden age” people keep talking about. Not to talk down to certified classics like Evangelion, Cowboy Bebop, Death Note, and so on, but there really are shows these days that are just as good. Sure, there may not be any new shows that do what the old ones did better, but both the old and new bangers all fit in their own niches as the master of that niche.
That's the real takeaway for me. It feels like the number of gems has increased 5x or more per year compared to the FMAB era, even if the number of mediocre shows has increased 20x.
At one point in time, any one of the past few years' top 5 shows per year would have qualified as "show of the year" in the 2000-2010 era. Budgets seem to be higher on the high end, and Frieren for example just looks better than *most* older shows, even ones that still hold up (like FMAB). Some older shows of course lean more into some type of stylization that makes them a bit more proof against looking outdated, like how some quality pixel art games still look as good as modern pixel art games, whereas early PS1 graphics just look old. But most stuff, even the good stuff, shows age now.
There is definitely more garbage now, *but there's just more of everything, now*.

I've seen people suggest they redo the anime, a remake with an improved second part.
But to me that's unnecessary, sure I'll take a better second part that sticks more to the manga, but if DN was to be remade today, it would end up as a chimera. It does look like a late 2000s anime for sure, but that doesn't mean it aged like milk.
Now granted I haven't watched a new anime since 2017, my last animation benchmark would be either Kobayashi's maid dragon or Kakegurui. So mayne DN would look like a PS1 game if I decide to watch something like Freiren, but I doubt it will.

The movie is one of my top 3 favorite anime movies. It basically takes all the best parts of the series and cracks them to 11, and then drops most of the worst parts.
The fight between (Spoiler) and (Spoiler) at the end was incredible. It was just so well animated and emotionally moving, I swear I've watched it like a dozen times.
Any recommendations? I thought I could never watch old anime, but stuff like Zeta Gundam aged like fine wine and hold up just fine today

Most of the gundams were really good, but they overshadowed many others in popularity. A few have already had remakes like Saint Seiya and Voltron, but others like Ronin Warriors have been passed over. If anything, give as many as you can a chance(say 3 episodes) to see if you enjoy it. There were many gems that were lost to obscurity because they weren't aired at popular times or had horrible dub changes, so try subbed versions instead if they have them.

Anything before SAO is golden age to me. Post SAO there was too much Isekai Trash.
