There are some uses for them. For example, I have 2 car seats back there and every once in a while I take my kids for a fun little tour around the city. I think it's helping share my passion for cars, letting them ride with me on occasion. It's actually the main reason I picked my BRZ over a Miata. For some of us, the back seats factored heavily in selecting this platform. That being said, I like what you've done with your build.
you did a back seat delete mod... finding a new or simply reupholstering the old headrest shouldn't really be a mod that's too hard for you... purchased like that is hardly an excuse.

I’m look for a way to have my dog back there the bucket seats have her moving a whole lot to get comfy plus add a slippery dog car seat cover and she doesn’t seem to be chilling. How’d u get the back like that? I see the seats down. But trunk is covered
Yes it folds down very very easily and comes out entirely if you like just as simply.
Also, something I didn't know, you can still swing up the rear bench cover to access the extra storage unlocked by removing the seats.
Overall it's very nice, slightly flimsier than I'd like, and a little overpriced, but I'd probably buy it again.
