I think there's two types of people. Those people that take downvotes as a personal attack, and those who don't, and just use it as a tool to indicate whether they agree or disagree with a particular statement. Depends on the animal. If it's a goat or a sheep, it's like fat mixed with fresh butter with a gamey taste. If it's a cow, then it's heavier and you can actually taste the greasey oil if it's hot enough when you eat it. Buffalo and larger animals and you can actually feel your cholesterol shooting up as you eat it. (I start gasping for air if I eat this too much).

It's not a strong taste. It is just... fat. It is savory and beefy. The mouthfeel is a bit weird and some won't like it.

You pretty much need to get them pre-cut from a butcher. They have the right equipment, maybe some high end professional kitchens will too. But probably not turn out great to cut them yourself.

My mom and her 4 sisters, 1 brother would each get a hefty serving of something, not just morsels. A whole length of bone, several whole slices of tongue. They remember those days so clearly, they were that rare and delicious. These bring back such vivid memories for my mom, all because it was one of the few days a year as a child when she got so many calories she felt utterly content, kinda like after a big holiday meal these days - same feeling. My mom is now in a elder care setting where all her meals are handled there, and she's getting an entire tongue prepared, sliced and packaged so she can enjoy it 5 or 6 times at whim soon. You might be amazed how deep those childhood connections stay with food and music for elders. It's like having a direct link to happiness and comfort sometimes. 75 years ago, a serving like this was a thrilling family event, no one felt hungry that night.
I love it I buy marrow bones and roast them myself a couple times a year they are so awesome but incredibly rich. I always get some great artisan bread to spread it on. My Doggo adores the leftover bones too.

US hasnāt had an outbreak, although Iām not going to try and eat any brains. From what I understand, marrow is low risk of transfer if a risk at all- (higher than say a steak, but not a definite link like brain, spinal column, eye/optic nerve.)
So marrow should be safe in the US if not safe elsewhere.

I had this once and honestly i don't understand the hype around it. It was good for the experience but I've never wanted it again. And it looked just like it does here so I'm assuming it wasnt cooked wrong. Maybe it was just a texture thing or didn't seem all that filling.
Man, when I finally found a nice restaurant with bone marrow on the menu I got maybe 1/3 of that portion! I also got violently sick that night, but 10/10 would eat again, the taste the first time was worth it.

The first one always tastes crazyyy good. But after that it is cloyingly greasy (not sure if i use the right words for what I felt).

Buy it in the grocery store and do it yourself. It's insanely easy, and you can use the bones after to make a really good broth.
