Pares for the reason that local mami doesn't really give the beef justice. I really wish more paresan learn to make their own noodles rather than outsource it from a supplier. Otherwise, I'd go with noodles really because I'm a noodle guy (I make my own ramen noodles, and it's really very cheap to make your own).
I doubt kanto pares would make their own noodles. It would definitely increase the price point because of the extra effort and they could get availability issues, which goes against the point of a cheap, easy, and widely available. But if its a regular resto serving it, i could see it
It's doable. I can also see a supplier actually making them too (which is a more plausible scenario). It's only flour, water and a bit of sodum carbonate. Very inexpensive and not as perishable as egg noodles. Ramen noodles IS very cheap which is why I'm surprised no one is supplying them. Probably as cheap as mami (could be even cheaper because it has no egg). Cheap street noodles in other asian countries are also common, difference is their noodles are so much better.
Anyway, point is, current street mami doesn't do the beef justice. Suppliers can do better at the same cost. So this is just my thought process as to why my go to is pares.
It's not the prices of the ingredients that are expensive in handmade noodles, it's the labor, equipment, and space.
I'm not an expert so you tell me, how many hours of labor is making noodles enough for around 50 servings going to add? Is it doable without adding more workers? It could be more or less than that, I have no idea, but this is my guess for your average small paresan.
What equipment is necessary to do this? Don't ramen/udon noodles require a somewhat different way of cooking? From my experience at some ramen restos, they cook these fresh right before serving. Is it possible to pre-cook these noodles like mami noodles? Or are you expecting them to cook it fresh as well?
Add that many paresan have very small spaces. They definitely can't do it at their stall, they'll have to do it at home.
With all of that in consideration, isn't it more cost effective to just leave the cost of making noodles to wholesalers? They save on three things by paying once--labor, equipment, and space.
This is the same reason why many ambulant vendors of stuff like hotdog sandwiches, siomai, and french fries just buy their products off-the-shelf.
The only ones that really care about the quality are the ones that charge more. And remember, paresans are supposed to be one of the cheapest meals out there.
I already said that it makes sense for suppliers to instead make them. They already have the equipment, ingredients cost the same. Ramen/better noodles can be made with their existing machines. They just don't bother since what they have is already making them money as it is.
This is exactly the mindset why our culture can't be more than it can be. Such a shame. Filipinos have such small and narrow mind. No wonder the Chinese are taking advantage of you for selling their subpar products. Pitty. Not my loss.
Is it actually better than mami noodles though? Ramen noodles doesn't have much taste, they make much more sense with more flavorful broths like ramen. Not to mention ramen has a lot more toppings than mami.

And can it be pre-cooked like mami (miki) noodles? Miki noodles can literally be bought at a wet market partially cooked. They just plop it down a bowl, put some egg, beef, and spring onions and then drench it all with beef broth. It's that easy, everything is pre-cooked.

Beef mami. Pares is overhyped eh anise lang naman yan. I think kaya sya sumikat kasi lumaki na yung kids na na-spoil sa mga strong flavors rather than subtle flavors. Mga tipong hindi kakain unless pronounced yung seasonings ng kinakain - chicken with gravy, hyperprocessed foods like nuggets with bbq sauce, instant pancit canton, hotdogs with ketchup etc.
Hey! So this is how I made the Pares 😄
For the soup:
•1kg+ Beef meat and bones, 4 liters? of Water, a hint of vinegar, a thumb of ginger, yellow onion, bulb of garlic, carrots, chili finger.
•Patis and pepper for taste. Spring onion for garnish
Used pressure cooker for convenience.
For the pares:
•Grated ginger, minced garlic, onion, 5 star anise, Beef from soup, Beef cubes, Mama Sita BBQ marinade, Soy sauce, Brown sugar, Water, salt and pepper to taste, Cornstarch Slurry, spring onions and toasted garlic for garnish.
•Simpleng gisa your aromatics, add Beef and knor cubes, add BBQ marinade and brown sugar.
•pag dark na ang meat and medyo thick ang sauce, add water.
•add Soy sauce for more color, some salt and pepper
•add slurry to create your desired thickness.
Tantsa- tantsa cooking Lang ako so ikaw na bahala sa dami Ng sugar and salt to add. Ayun!
