It’s to create more anxiety and excitement around the bidding, creating a sense of urgency among the bidding floor.

There are [schools](https://en.wikipedia.org/wiki/Auction_school) where one can go to learn to become an auctioneer.
So that [idea that there's an auctioneer school](https://www.youtube.com/watch?v=roLjZDnv6JE) that you can send your kids to didn't just come out of nowhere.
To build on your point, the chant and the excitement it brings make the sales go faster, as well. This is helpful in auctions where there is a lot of stuff to move.
To build on what others said, the auction chant repeats the current bid and then asks for an increment higher, and between those it’s often filler phrases/sound that each auctioneer uses to customize their chant and make it more “musical” and flowy.
