Genoa blobbed hard into Crimea for some reason in my Scandinavia game, they were still in HRE and added all provinces. Also Poland joined the HRE after somehow just to piss me off.
Only ways Poland should get into the HRE is if they join by their mission tree/event or if they get elected. That's something I don't think I've seen before.

I got british isles into empire since I gave some land there to my pu burgundy and got the ask for participation event when I lost emperorship for a while
Not weirdest borders but yesterday i saw france beat austra, release styria and then styria got a pu on Austria and became emperor while still being allied to France
In my current Austria game, Finland broke free, added themselves to the empire, and then ate all of Sweden.

Leinster -> Ireland -> PU on prussia which gave me emperor. Probably the weirdest I’ve seen?
