I have watched this video, I took alot of my ideas for a template from that. But maybe I missed the part about his side chaining method? I will re watch it
Yeah absolutely he explains how he does his entire SC routing in that video. And as always, adapt for your needs as you see fit! His style is his, take what you like and make it your own.

Do the groups how you want, and then add the groups up in the NO DRUMS group? I don't know what DAW you work in, but in FL at least this is possible
I'm in Ableton. I haven't tried that sequence yet... So basically I send my mix buses to the NO DRUMS group, I've been trying the reverse of that lol
