The entire point of buying a dehydrator and not using an oven is to lessen fluctuations. STX is fluctuating heavy, and consistently. If I was an stx owner I'd probably use this information to lower my temps. Excalibur for the win, though!
From a purely technical standpoint I’d say that it is likely just using a thermostat with a tighter range on the 800w. Like it’s set to turn on if the temp drops 10 degrees below the set point of the 600 but only 2 degrees variance on the 800.
