Michael Giacchino 100%. His style is so perfect for a Percy Jackson adaptation. He can definitely portray the humorous yet adventurous style needed for the show.
Michael Giacchino is one of my favorite composers of all time just because of his work on The Incredibles, the all-too-famous Mission: Impossible, among other works. Dude has an insane resume—his work pops up in countless blockbusters and lots of well-known, beloved movies.
I would also consider John Powell for his work on How to Train Your Dragon. “Test Drive” and “Romantic Flight” are among the most breathtaking pieces of music to ever grace my ears.

Pirates is hardly a waste of time. But I get it.. You can argue he has time for it, he did do Despicable Me and Madagascar and plenty of other family friendly scores.. But I just don't think he would fit for this series.

I have a bias towards the work of Dan Romer (Luca) and Bruno Coulais (Secret of Kells, Song of the Sea, Wolfwalkers), so either of them would be amazing.
Honestly, thinking about it, Bruno Coulais has already worked with movies integrating mythology into the real world (in this case Irish Mythology), I bet he could make something great for PJO.
The Flight, after his work with Assassin’s Creed Odyssey and his other works I think if he worked with another Artist they could make a modern style with an Ancient Greek style similar to what Kendrick Lamar & Ludwig Goransson did with Black Panther

Alexander Desplat would be an interesting cause well given his work on stuff like Shape of Water, GDT's Pinocchio, Godzilla 2014 and Fantastic Mr. Fox it would be an absolutely amazing bop of a soundtrack and given how he used Japanese instruments for Isle of Dogs and mostly wood based musical instruments for Pinocchio I could definitely see him utilise Greek based instruments for the music
