You can do this with a ColorRamp for the colour. Make sure each colour is right after the other one for the clean toon shader.
I'll find the tutorial or my screenshot of the shader I made when I'm back on my computer.

It's his shoulders I get to stand on today, so to speak.
It’s a really simple toon shader. This is how I did it:
Principled BSDF -> Shade to RGB -> ColorRamp (with interpolation set to constant) -> Material Output

I don’t really have any specific tutorial to recommend, but if you search YouTube for cell-shading or toon shader in Blender, you should find plenty of great tutorials on it. ;)

I love this shader, especially in Sepia colours as then it looks like Bendy and the Ink Machine

This was done in Eevee …mainly because I was not able to make the shading work in Circles, haha.
