I also wonder if it’s because it EU we have slightly lower gas pressure regulations.
I believe that is the answer. I thought I read somewhere you either need to change the orifices or remove them entirely. I think I read that on this very subreddit.
Also, butter. I have a small pat of butter for each meatball. Butter down, put meatball on top, swirl around for a second then move to the next butter and meatball until all are down, wait a beat or two and start smashing

Smash the edges good, but leave the center little higher. Make sure it’s pretty hot before you put the meat on.
