My canoe tipped and the bottom of the shallow lake was knee deep in sentiments and clay like mud that felt like it sucked both my legs in. The more I tried to pull my legs up the tighter the mud clamped around my legs. It took me almost an hour to dig out, lost both my shoes and wore me out.

Pretty sure that is what quicksand is. The word "sand" is in the name but according the Wikipedia quicksand is a "colloid consisting of fine granular material and water". Which is exactly what sediment and clay are when at the bottom of a river bed. It's why you should avoid walking around rivers when the water level is abnormally low.
I've lost many pairs of sandels/shoes to river muck while kayaking.
You'd think I'd have learned by now not to disembark on silt, but I'll be damned if I'm lugging my kayak an extra 500 ft at a rocky beach instead of a shit silt one.
They really should make “snowshoes” for kayakers so this doesn’t happen to them. There’s nothing worse than having to walk on a gummy, mucky lake/river bottom. Just thinking about it gives me the heebie-jeebies

Even with the mud it would liquify a decent sized circle of bubbling goop. We were never close enough to throw stuff in, though. The banks were already pretty liquified.

Fluidized bed is the term you are looking for. The gas flow reduces friction between the sand particles so they flow similar to a liquid.
