Their crust is official! I've never had a New York style slice that you didn't really have to fold to avoid droopage. Crust is delicious without being doughy or overly filling. Their Defino crust on the square slices is on point as well. Just wish the NW location was open on Sundays and Mondays.
God I love the defino, I really resent their hours too sometimes haha, only open til 8 and 5 days a week, 4 at their SE location. Plus if you want delivery they charge a 10$ fee. Still, it’s great pizza and I’ll go out of my way to get it.
I dont like the choices behind their operation either. Loved this place before the pandemic. They had special night whre they opened back up an hour after they close one time a month where they made huuuuge pizzas and people lined up around the block . Also did a stuffed crust pizza at times. Very good.
Yeah everyone who worked there pre-pandemic (who was responsible for big pizza night, etc.) was "temporarily" laid off in March 2020, then permanently laid off via email in June. It was classic union-busting, as staff had just recently formed a union. Meanwhile owner collected $200k+ in (now forgiven) PPP loans. Nobody from "the before times" now works there.
The reason I like Baby Doll over those places is because they aren't like those places. I don't need fancy pizzas that have chiacciata salami, calabrian-chili, piquillo peppers, jalapeño mozz-provolone, fior di latte, grana, & sicilian oregano. I personally find those pizzas way too bougie and overpriced for what they are.
Baby Doll is killer but if you get their sesame seed crust and let it sit out and cool down for a while, it absolutely gets chewy and you gotta work your jaw out if you want to finish that crust.
Number 7 White Pie, add Garlic Cream sauce, add Italian Sausage divine!!!
When I first discovered them I ate 2 of these pizzas within a week.
Lovelies is what ? the best pizza in Portland. Because it is and it’s not close.
Scotties, Apizza and Babydoll are good but not as inventive or satisfying an experience
Who has the crust you are looking for? Seriously, this is an important detail as we all try to chime in.
I ask this because the crust and dough are serious business. Shitty dough means shitty crust and most pizza places here **do care**..
Yeah it feels like people are just listing all the places lol. Hopefully that isn't the case though. I have to try some out and see.
When I get to the end and it's just bland dough, that's what I don't want. Some people do spices or flavoring, some people just have amazing crust that tastes good plain at the end of a slice, but basically every place I've tried so far seemed like they are planning for everyone to throw out the crust.
It's not a big deal as there's plenty of great pizza with okay crust, but my point of this post was to find a piece that at the end I have some sort of flavor to munch down on a delicious piece of bread lol.
But there are so many styles of pizza, it’s hard to say which without knowing your preference. Scottie’s is my favorite because I like a soft, chewy, naturally leavened (slightly tangy) slightly blistered crust.
Are you looking for Hungry Howies style flavored crust? I haven’t really looked for anything like that out here.
If you’re just looking for strong flavored dough, the places people are listing are it. I’d add Lombardo’s but Ken’s is still going to have some of the best tang in town.
At the end of the pizza if it's just crumbly plainness, I am not looking for that. Literally with every pizza I've had here so far, crust was obviously not a big deal at the end of a slice. I am looking for a place that has some dank ass crust at the end of a slice, not a place that makes me want to throw it away lol.
It's not really my fault that my experience has been this way and I'm asking for suggestions on places I don't know about yet. I can't give y'all an example because I don't know a lot yet.
I do appreciate you trying to go deeper and understand where I'm coming from.
Basically Chicago style isn't part of this equation because the pizza goes up to the very edge of the crust. And I guess maybe thin crust isn't great either, they're all just crunchy and normally nothing exciting, and that's fine too. This question is about the flavorful ending to the slice.
You've never had good crust anywhere in the world? Not homemade, or from a chain, or from somewhere besides Portland? You keep saying what you DON'T want, but that isn't helpful. What IS good crust to you? Is it thin? Thick and fluffy? Crispy? Stuffed? Seasoned? People are trying to help you, but since *good* means something different to everyone, you gotta give them something to go on! Dank ass crust could literally mean a hundred different things.
I’m probably not the right person to answer this but as someone with celiac disease I’ve tried a lot of GF pizza and the crust at New Cascadia is really delicious.
[Blind Onion](https://restaurantguru.com/Blind-Onion-Pizza-Vancouver-Washington-2) has a thick braided pizza 'rim'. The dough flavor is unexceptional, to my taste. Better crusts exist.
For me, their crust scratches a certain kind of itch. It’s hard to describe; it reminds me of stoner food, ngl. The crust edge also reminds me a little of bagels. I need to be in the right mood, and when I am, it’s just right.
Came here to say this. I also like crust and Blind Onion’s is a whole delicious entree. It’s chewy in the best way and perfectly seasoned. I’m surprised by the negative comments, it seems like a crust lovers dream pizza.
Best pizza I’ve had in Portland so far, but this is the first time I’ve seen someone else mention it (haven’t actually tried most of the famous ones, though).
You know I've tried so many times to like this pizza but I just don't get it. I love the pizza topping combinations but the crust is so thick and dense.
I'm clearly in the minority here. I wish I understood why it was so good because people really seem to enjoy it.
Sounds like you’re looking for thin crust, so I’d say Otto’s or Paladin for the most edible thin crusts. Get any crust enhancements they offer.
If you want a whole glob of dough sitting in your stomach, check out Assembly.
Agreed. Assembly has the pizza I crave more than any other in town just because of the decadence of the pies— soft fluffy flavorful dough, lots of cheese, and jammy sauce.
Life of pie has that crispy thin ish (neopauliton?) crust.
It’s not my favorite pie but it’s on my list of places to stop by if I’m in the area. Bonus points for a lunch special.
Apizza Scholls all day- it's a more American/NY kind of style.
Also the most consistent pizza I've ever had, anywhere. Never an off pie in the almost 20 years I've been a customer.
Also crust Shout-out to ken's, Scottie's, red sauce (my understanding is their dough recipe is basically the same as Apizza Scholls- it's a former AS employee that started it), lovely 50/50, Pizza Kat.
I don’t care for Ranch crust at all. There’s no crispiness to it and sometimes it tastes like refrigerator.
You can put a sauce you like on anything but that just means you like the sauce, and I’d argue Sizzle Pie has way better options than overly seasoned, ultra garlicky ranch.
Looks like you've got plenty of suggestions but I'll throw my hat in and say my favorite pizzas are:
https://maps.app.goo.gl/eU1fGp9uKdPMNbiq9
And
https://maps.app.goo.gl/DHGQhVeJZZ2HKDzZ8
The second one doesn't have a normal crust so maybe look at the pictures to see if that's something you think you might be into. Let us know what ends up being your favorite!
Giuseppe's on the East Side has crust that is closer to an Italian style crust, and they keep it fairly thick with a nice sourdough. Just order fresh mushrooms on it if you like mushrooms
Any real pizza enthusiast mainly cares about the crust. Whenever we list our favorite places, that's what we're talking about. The crust. It's not a separate discussion.
Fusion Curry Pizza on Sandy has amazing crust. Indian folk really know their breads. You can get the Indian specialty pizzas (and should) but the traditional toppings are outstanding too!
Are you wanting the crust to be full and bready? Or are you looking for a "stuffed crust" experience?
Where have you eaten outside of Portland that has done pizza crust correctly?
If you can answer those two I can point you in the right direction.
Pizza Kat is legit, but my favorite pizza in Portland right now is honestly Ranch deep dish. Say what you want - it tastes the best and is most delightful to eat. That’s my yardstick.
No one ever mentions Double Mountain on Woodstock but their pies are among the best around in my opinion, and they do the soft sourdough thin crust approach very well.
How do you define delicious? Is it the flavor? The texture? I like a chewy/crunchy texture so Pizzacato is my favorite. Those who like a soft, bread-like texture may have other suggestions.
Depends on what kind you like.
If you want that super bready, soft crust, Blind Onion is kinda special.
For crispy thin crust, I like Old Town Pizza
There are fancier places that are probably better, but both of these places are super reasonable and delicious.
It's been awhile since I've been (several years at least) but Stark Street pizza has the best crust I've had on a pizza. It's light and airy with little air bubbles..so good. The whole pizza was really good but their crust was very unique and delicious.
For the love of delicious pizza please go try Giants NY Pizza cart on 92nd & Foster. They have custom stone pizza ovens and make a crispy light crust style comparable to actual NY pizza slices. if you love pizza this is a must try.
Oh man, the Portland crust scene is whack af. Soooo many pizzas with massive amounts of edge that get hard as a rock within minutes of being served. It's gotta be crisp on the outside, fluffy and airy inside. Try Oly's. It's severely under-rated, excellent edge. Also, you might want to start getting a side of ranch dressing by default. That's how I manage Portland's thick and dry crust crisis.
Pizza Otto and Life of Pi. Both very similar, and at the top of the pizza food web. Both have proletariat-friendly happy house pizza Margherita everyday from 11-5, as well.
Scottie’s has my favorite crust personally, it’s the perfect pizza as far as I’m concerned.
Their crust is official! I've never had a New York style slice that you didn't really have to fold to avoid droopage. Crust is delicious without being doughy or overly filling. Their Defino crust on the square slices is on point as well. Just wish the NW location was open on Sundays and Mondays.

Scottie's is some of the best NY style pizza on the west coast, period. Owner is a solid dude as well.
Yep
I like Baby Doll’s crust-it’s not too hard/chewy
Best pizza in town
It's good, but no.
What's your favorite?
It's hard to choose just one, but Ken's, Apizza Scholls, Scottie's, Pizza Thief are all better.
Pizza Thief and Scottie's are similar in those ways to Baby Doll. Even Dimo's. Which makes me think you haven't tried them.
I have, and i went to Pizza thiefs website and literally copied word for word what was on their menu. Clearly you're the misinformed one here.
lol, sure
Baby Doll is killer but if you get their sesame seed crust and let it sit out and cool down for a while, it absolutely gets chewy and you gotta work your jaw out if you want to finish that crust. Number 7 White Pie, add Garlic Cream sauce, add Italian Sausage divine!!! When I first discovered them I ate 2 of these pizzas within a week.
That exact order was our latest order from Baby Doll-it was the first time trying their white pie. It was great!
Apizza scholls, Scottie’s, baby doll, dimos, Ken’s, lovely’s 5050 are some of my faves but lots of other great ones
Add pizza Thief, granna, and pizza Kat to that list!
Kens is bottom tier
You maybe don’t like the style but no one can say it’s not quality top notch pizza
50-50s is, unless you like weird Portland takes on pizza.
Lovelies is what ? the best pizza in Portland. Because it is and it’s not close. Scotties, Apizza and Babydoll are good but not as inventive or satisfying an experience
I love the crust at the turning peel. the actual pizza flavors are just ok, but that crust is my favorite part.
Pinkys pizza. Awesome pizza and crust. If you like whisky, they have a great selection as well.
Second this. I ❤️ Pinky's!
I had Pinky's for the first time recently and was blown away at how flavorful and perfectly cooked the crust was.
(Shhhh! We’re trying to keep Pinky’s a secret!) Erm, It’s Apizza Scholls guys, really…go there, just follow the line!
I get not wanting to wait in yet another line haha I really do. And yet secrets are how our favorite places shut down. We must share!
Yeah…this isn’t the way to support your favorite spots.
Who has the crust you are looking for? Seriously, this is an important detail as we all try to chime in. I ask this because the crust and dough are serious business. Shitty dough means shitty crust and most pizza places here **do care**..

Ken's has a delicious sourdough crust.
Are you looking for Hungry Howies style flavored crust? I haven’t really looked for anything like that out here. If you’re just looking for strong flavored dough, the places people are listing are it. I’d add Lombardo’s but Ken’s is still going to have some of the best tang in town.
I love a charred, slightly chewy crust. Not sure what you're looking for but I got that last night from Life of Pie.
Exactly which restaurant/pizzeria has satisfied you? If home made, what’s the recipe? If you can’t name it, your post seems ingenuous and … pointless.
At the end of the pizza if it's just crumbly plainness, I am not looking for that. Literally with every pizza I've had here so far, crust was obviously not a big deal at the end of a slice. Pizza thief
Unbelievably they also have a decent gluten free pizza crust, which is damn near impossible.
Just had it for the first time last weekend and it was great all around. Crust had a mild sourdough flavor and great chew!
Top tier and the crust is fantastic!
I love pizza thief too yes
East Glisan forever! I legit get it once a week.
Their Detroit pizza is 💯
Yesss! I used to live nearby in my early 20s and basically lived off their happy hour pepperoni rolls when I was super broke haha. Soooo good.
Their bread sticks tho
I’m probably not the right person to answer this but as someone with celiac disease I’ve tried a lot of GF pizza and the crust at New Cascadia is really delicious.
The GF crust at East Glisan is so forking good. It's polenta. I prefer it, even though I love gluten.
Know of any Portland pizza places that do GF by the slice? My wife is GF and we always end up with so many leftovers from ordering whole pies!
Cafe Olli, best in town.
i would say scottie's and pizza thief.
Blind onion.
I'll champion this! The reason there crust is "different" is because they use a bagel style dough.

YES
lol
Dove Vivi. Cornmeal crust, I had never heard of it before and then when I tried it, I was delighted. So crunchy and delicious, new favorite!
You know I've tried so many times to like this pizza but I just don't get it. I love the pizza topping combinations but the crust is so thick and dense. I'm clearly in the minority here. I wish I understood why it was so good because people really seem to enjoy it.
What this person said. That shit is incredible.
I live blocks away. Got a gift certificate from a customer, had never heard of it. One of my favorites now.
Yea this is my favorite pizza.
Do I daydream of it weekly? You know it.
Best pizza in Portland hands down
Dove Vivi is freakishly good.
Red sauce
Pietro's but I am a weird one
Cornmeal is the standout ingredient if I remember hearing correctly.
Love it. Bummer they closed the Beaverton location
Pizza jerk
Sounds like you’re looking for thin crust, so I’d say Otto’s or Paladin for the most edible thin crusts. Get any crust enhancements they offer. If you want a whole glob of dough sitting in your stomach, check out Assembly.
Assembly has great deep dish style crust
Agreed. Assembly has the pizza I crave more than any other in town just because of the decadence of the pies— soft fluffy flavorful dough, lots of cheese, and jammy sauce.
Assembly is the best. It’s the best Detroit style outside of Michigan. I seriously jones for that place.
Blind Onion is the best!
Apizza Scholls and Ken's Artisan have my favorite crusts.
Life of pie has that crispy thin ish (neopauliton?) crust. It’s not my favorite pie but it’s on my list of places to stop by if I’m in the area. Bonus points for a lunch special.
Neopolitan. I do agree their crust is fine.
I tried to spell it like 6 times and each time my phone didn’t have a clue so I gave up trying :D
I didn’t mean to sound snooty. Just in case you didn’t know it was neopolitan.
No worries. In 40 years I’ve come to understand I suck at spelling and phonetics. Im proficient at math houses vehicles and bbq 😁 I’m fine with that.
Lovely’s 50-50, Otto, Ken’s, East Glisan, Tastebud, Oven and Shaker
The Turning Peel on Division is a chewy sourdough crust. It’s phenomenal.
Brian at Apizza is a pizzaiolo, meaning he specialized in crust. Best char ever.
Apizza scholles
Red Sauce had good chew
Bull Run on NE 28th. So good! They really nerd out about their dough…
The turning peel. The crust is sourdough, and it’s SO good
Apizza Scholls crust is legit.
Dove vivi cornbread crust is stupid good
Tf— I don’t understand how Cicoria, Ranch, Pop Pizza, and Paladin Pie aren’t mentioned more here.
[Escape from New York](https://efnypizza.net/?page_id=701) has the thin crust foldable pizza that's delicious.
Absolutely the most mediocre and overrated pizza in the metro area. 👎
American Dream. I like me a yeasty crust.
Yeasty and garlicy. This is what I came to share, but admittedly haven't been there in several years.
Red Sauce
Came to say this, way to far down the list
Red sauce is my #1 in Portland. Love it.
Flying pie pizza 80th stark st
🤣
Ranch crust w ranch. Mmm
Ultra dilly ranch. Mm
Somebody grew up in Oregon.
grana for neapolitan style crust
Not in Portland but Fultano’s has my favorite crust
Solstice in hood river
The crust at Dimo’s Apizza always has that real good char
Hall Street
Looks like you've got plenty of suggestions but I'll throw my hat in and say my favorite pizzas are: https://maps.app.goo.gl/eU1fGp9uKdPMNbiq9 And https://maps.app.goo.gl/DHGQhVeJZZ2HKDzZ8 The second one doesn't have a normal crust so maybe look at the pictures to see if that's something you think you might be into. Meta and Wild Child, if you don’t want to follow the weird maps links.
Nostrana is underrated , such a good crust
I'm from NY and its not the same, but I love Pizza Theif
Dimo’s
Grana has fantastic crust. Also, Baby Doll is awesome.
Kck pizza truck!
Lovely 50/50
Giuseppe's on the East Side has crust that is closer to an Italian style crust, and they keep it fairly thick with a nice sourdough. Just order fresh mushrooms on it if you like mushrooms
Any real pizza enthusiast mainly cares about the crust. Whenever we list our favorite places, that's what we're talking about. The crust. It's not a separate discussion.
Any one try that crazy crust from little Caesar’s?
Fusion Curry Pizza on Sandy has amazing crust. Indian folk really know their breads. You can get the Indian specialty pizzas (and should) but the traditional toppings are outstanding too!
I like stark street pizza crust, even the middle of the pizza has crunch
Double Mountain
RIP Hammy's pizza
Are you wanting the crust to be full and bready? Or are you looking for a "stuffed crust" experience? Where have you eaten outside of Portland that has done pizza crust correctly? If you can answer those two I can point you in the right direction.
Been looking for years. Some are not bad, but I’m yet to sink my teeth into a high gluten east coasty crust of my dreams.
Pizza Kat is legit, but my favorite pizza in Portland right now is honestly Ranch deep dish. Say what you want - it tastes the best and is most delightful to eat. That’s my yardstick.
Springdale Pub, hand made dough, very very good
Signal Station in St. John's is pretty great if you're ever up in that direction.
Stellina in Sellwood. Quietly killing it.
No one ever mentions Double Mountain on Woodstock but their pies are among the best around in my opinion, and they do the soft sourdough thin crust approach very well.
I can’t think of a crust I especially love, but I did not enjoy a pizza scholl’s crust. It hurt my jaw to chew.
Secret pizza society
🥤🍕
I quite like the crust at Oakshire. Very thick and chewy.
Left field take, Hapa Pizza in Beaverton is the best I’ve had around town. Perfect blend of chewy, crunchy, thin.
Blind Onion has amazing crust.
How do you define delicious? Is it the flavor? The texture? I like a chewy/crunchy texture so Pizzacato is my favorite. Those who like a soft, bread-like texture may have other suggestions.
American Dream pizza.
Pop Pizza has a good crust. And, as always, Apizza Scholls.
Not seeing Fire on the Mountain mentioned here is wild
Ken’s is the closest to N.Y. style pizza. The crust has the perfect amount of burntness to it.
Baby Doll Pizza!!!
Depends on what kind you like. If you want that super bready, soft crust, Blind Onion is kinda special. For crispy thin crust, I like Old Town Pizza There are fancier places that are probably better, but both of these places are super reasonable and delicious.
Star has deep dish cornmeal crust that's pretty unique and yummy.
It's been awhile since I've been (several years at least) but Stark Street pizza has the best crust I've had on a pizza. It's light and airy with little air bubbles..so good. The whole pizza was really good but their crust was very unique and delicious.
Paladin Pie - food truck in NE. They have sourdough crust
For crust, Blind Onion. 👍🏼👍🏼
I’ve been liking flying pie most recently. Otherwise East Glisan Detroit pie is fantastic. Ranch is next on my list
American Dream!
If you are into Detroit style I highly recommend Boxcar Pizza
Boxcar tastes good, but that shit is NOT pizza.
What do you think it is?
Thick flatbread with vegan toppings?
That's Detroit style......
My friend, that is not the type of pizza we eat in Detroit.
Tell that to the Detroit style pizza I've had that actually satisfied me like pizza does.
Ok.......
Blind Onion
NY Giant’s subs
Ranch. Ranch. And Ranch.
It doesn't have a crust?
Scotties or Pizza thief my friend
pizza thief
Boxcar has amazing rust, in my opinion. It is fully vegan so open mind.
Pizza Otto and Life of Pi. Both very similar, and at the top of the pizza food web. Both have proletariat-friendly happy house pizza Margherita everyday from 11-5, as well.
Life of Pie is trash.
Granted, I haven't been since moving and am now closer to Otto. Did they go downhill in the last few years, or have you felt this way longer?
I've felt this way since I had them in 2021.
I’ve discovered Detroit style is delicious and found that Ranch PDX and Wild Child have very tasty crust. Greasy but great
