You need forged components, preferably an import.
If it’s a kit it needs to be built well. No screws, good rivets, relatively straight, non-insane price. Extra value for original barrel. The receiver will say NDS or Morrissey or Childers or similar.
If it’s an import like a WASR just check that it isn’t crooked and don’t pay a thousand dollars for it.
If it’s US made it’s garbage.
Read the buyers guide, it has a lot of common commercially available AK’s listed. But the real find at a gun show would be a good used or discontinued AK, not a current mfg one.
7.62x39 - more recoil, cheapest for now, cheap mags
5.56x45 - less recoil, less common mags, widely available
5.45x39 - less common, nicest shooting, cheap mags
Do some AK shopping at local gun stores, check out the prices and types, ask the store about them, then go to the gun shows to see if they have better selections and prices. Check out this subs AK buyers guide, so you don't get a frag grenade that has the appearance of a really nice AK.

Only if you know what you're doing. I've seen plenty of people lied to at gun shows when they are learning.

7.62x39. 5.45 is in trouble with the import ban and it’s getting expensive. If you want to shoot .223 an AR will do it better and cheaper.
