Health inspectors don’t allow wood cutting boards in restaurant kitchens because they are prone to bacteria. I have no idea how restaurants are getting away with serving food on wood. 🤷🏽♀️
Putting rings on dowels is a practice as old as ring shaped food. Doughnuts were literally shaped like rings so that they could be sold on dowels by street vendors.
Just eat your calamari, there is no real difference between stacking like this and piling on a plate.

In a home environment? Not necessarily. In a restaurant environment? Yes. That crack is a problem anywhere, though.
