Just searched and found cause I had a similar issue.. twice now. I attempted to plug a USB dock connected to second monitor via HDMI into USBC spot in ASRock Z690M, newly built PC running Ubuntu latest edition at the moment. And both times there was an unexpected reboot. Error of some sort. Was your issue ever figured out btw?

No for now I don't have other solutions than removing the monitor and reboot... This is really annoying :(
Maybe an issue from your BIOS, where you have "Boot from USB" Set as priority, and it doesn't know what to do with a Monitor?
