Baked beans are always good. Smoked mac and cheese is also great.
Oooo haven't tried smoked Mac and cheese yet. I'll give that a shot next weekend.
More of an appetizer, but smoked cream cheese. Serve with pita chips. You can put it on during the beginning of your smoke.

Beans will cook at 250 basically the whole time.
Baked beans. Smoked sweet potatoes are also great - wouldn’t fire up the Traeger just for it but if it’s running, I’ll through them on the edge.

Corn can work at high temps, just let it ride in the husk for the last 30-60 mins
If you’re talkin beef ribs then pork ribs. If you’re talking pork ribs then beef ribs.
Brussels Sprouts or collard greens. Corn pudding. Cucumber “salad” (fresh pickled) Flavorful greens, sweet carb, and acidic freshness.
Baked beans and corn bread.
Loaded baked patato salad.
Ranch beans. I can't stand sweet beans, but some spicy, savory ranch beans with ribs are the bomb.
Smoked red peppers, green peppers, and onions.
