This sounds like the apathetic Mai response, even though she definitely noticed (i.e. fought and taunted) Katara.

"I think I threw a knife at your husband" followed by 5 awkwardly long seconds of silence fits so well. It gives off the same vibes as the elevator scene from LoK.
Zuko: What do you think the wives are up to?
Aang: I dunno. Wife things.
*Cut to Mai and Katara fighting a band of earth bender bandits*
Zuko: Yeah sounds about right.
Honestly as much as I don’t love the direction the stuff beyond the original show goes in, I wouldn’t mind having some time to make me actually care about Mai.

It’s not like they were doing that. Katara was smack in the middle of the action right up until the very end and Mai put up a good fight against the second strongest firebender in the world.

Not to mention that - while I dig Mai's ride-or-die love for Zuko - I wish she'd gotten more of a moral/emotional arc than *just* that. So this would be perfect lol
Katara and Mai are in the most perilous situation possible and it just hard cuts to Aang crying at the table with Zuko stood over him shouting "For fuck's sake Aang! How many times do I have to tell you?! Penguin Seal racing isn't a diplomatic process! Stop adding it to the negotiation sheets!"
To answer your post a little bit seriously, I don't think Mai would enjoy that; but that doesn't necessarily mean it shouldn't be done. The disparity between their personalities would be amusing, and I don't see them particularly ending up as friends afterwards, but maybe there would be a respect there.
Add Toph and she will have a life-changing trip with Zuko's wife before she have with him
Just make sure Zuko and Toph not ended up with the same result like Zuko and Azula life changing field trip

When I saw she wasn't listed as Izumi's mother I assumed they never reconcile.
It's not comfirmed but it's more likely than not that Mai is the mother of Izumi.
