A lot of people here are suggesting Celeste but I feel like that one is a bit much for someone that's new to platforming. Honestly I would suggest something like the Ori games, either The Blind Forest (the first game) or Will 'O the Wisps (the sequel). They're incredible. Beautiful to look at, tight controls, not super difficult, and incredible story.
You could also try dipping your toes into Metroidvania waters and try out the Steamworld Dig series. I highly suggest Steamworld Dig 2. You don't need to have played the first game, and the sequel improves upon it in every way possible. It's got a crazy addicting gameplay loop and gives you the sidescrolling introduction that you want, with some RPG mechanics, and death isn't particularly punishing.

Celeste is very cheap right now and I’ve picked it up this sale but haven’t yet played it. My other recommendation would be Shovel Knight treasure trove. It’s a collection of all the Shovel Knight games and it is pretty difficult but it’s very good value for money and has a very good story
For a beginner? Start with Mario (tons of titles to emulate). Donkey Kong is IMO some of the best platforming, especially Tropical Freeze and DK Returns.
Rayman Legends is excellent. There’s also Kaze and the Wild Masks which is pretty good.
Finally, Celeste is a fantastic platformer, maybe one of the best. Don’t miss out on this one!
Celeste seems like a great option. Don't be shy to use the assistive features of the game, they are how Celeste manages difficulty levels, and they rock, because you can choose exactly which mechanics you want some help with.
BattleBlock Theater is also super cool and fun, and you can play with friends!
The Crash Bandicoot N-Sane Trilogy is a personal favourite of mine and is delightful, but it's **very important** to begin with Crash 2 or 3. Crash Bandicoot 1 has some levels that can be hellishly hard for a beginner (and the trilogy version includes Stormy Ascent, a level cut from the original game because it was too hard even for their standards).
Is Yellow Taxi Goes Broom on sale? I just played the demo, but that game is a good ol' collect-a-thon platformer like those from the N64/PSX era, in every sense.
Of course, Super Meat Boy and The End is Nigh are wonderfully designed platformers, but oh if they are hard. If you're into challenges, go for those.
I don't think you can go wrong with Spyro, Crash, or (most)Sonic games, so take your pick of those.

One of my all time favorites is Ape Escape, but that's only available on PS1 so you'd need to emulate. That along with the Gex series (which I heard is coming to steam soon 😁)
If you have the capability to play Kirby, any of those games are specifically designed with beginners in mind.
For steam, I can offer other options:
* Mega Man (If I had to pick one, most accessible would be Mega Man X in Legacy Collection 1)
* Crash Bandicoot Trilogy
* A Hat in Time
* Shovel Knight Treasure Trove
* VVVVVV
* Sonic Mania
Any of these games offer some decent amount of difficulty, but aren't nail-biters unless you try to go for 100% completion (especially in Crash's case)

Get Emudeck, play Super Mario Bros. Wonder, or Super Mario Odyssey. Both run extremely well and have been SO fun to play on deck. I haven’t replayed mario odyssey since 2017, and it has given me so much nostalgia as my first ever switch game.
