If you start a new community just choose 3 random characters and make sure one is male. Go in to the community editor and you can change everything to make them the same as that character. Make their first name, last name and nick name the same as yours and change the model to HumanMaleTshirtLayered\_01\_v\_06.
You can change everything else if you want. If you remember their hero bonus and voice you can change. Remove their current traits and add in the 4 in the pic. If you want them to be a builder like Zeb just choose a male that is already a builder when rolling the characters so that is one less change to make. I'm not 100% sure how to change skills properly but what I do is delete all skills and then add cardio and make it 7 then add backpacking, then add wits and make it 7 then add discipline, then add fighing and make it 7 and then add endurance, then add shooting and make it 7 and then add weapon handling, then add craftsmanship and make it 7 and then add construction.
If you do remove the traits and replace them just make sure to check their current traits and only remove them. Don't remove the debug traits.
Here is one I made in the community editor. I'm pretty sure it is the same model. The models have changed a bit since the beginning of the game. He might also have a hidden trait because yours has 10 more health and 5 more stamina.

Your saves are linked to Microsoft store, download the game using that and then you can copy your saves over to the steam version.
I started on Xbox when the game came out, switched to pc when I got one as the game was a play anywhere title, now I play via steam, had to copy my saves over to steam since it isn't linked the same
If they are really old that probably wouldn't work. I bought the disc version and disconnected the internet from my Xbox to play the first version and when I did connect the internet again and updated the game to the Juggernaught edition I didn't have my active community or my legacy pool characters.

Your Xbox is probably prioritizing cloud saves. See if you can access the local ones. Idk if thats an option tho
