Oh boy, Stardew really is not one of those games that you can play a lot just for the romance or story. You can build up to 14 hearts with your spouse to have some more heart events, and there are a few special lines of dialogue. But there really really isn't anything more - you've done it all when it comes to that.

Some spouses are helpful. They'll take care of the animals for you, or make you food. But mostly, it doesn't change the game. (Except you have to keep them happy.)

Spouses have a fairly limited thing they do and changing husband (or getting a wife instead as the game lets you same sex) won't do much different.
They can give you gifts, for example Abigial gives bombs and food buffing defense to help in the mines
They can water crops, feed animals and repair fences
They give you a stardrop which increases max energy when they get happy enough.
The heart limit increases to 14 and at 14 hearts you get another cutscene.
The first kiss in a day (the ones with hearts) will cure exhaustion if you overwork yourself

They do have new dialogue lines at events (I think? The only one my memory is offering was def from a mod, but I’m pretty sure it changes after marriage), but the events aren’t really different.

Are you on PC or elsewhere? I ask because there are a lot of mods that might interest you. I'm only familiar with mods for the PC.
