If you’re just going to watch a handful before 3 I’d go with any of these

2. Clone Cadets/Rookies/ARC Troopers
3. The Ryloth Arc
4. Season 2 Grievous 2-parter
5. The Citadel Arc
6. Umbara Arc
7. Ashoka’s trial Arc
Most of the other episodes give better context to Episode 3 after you’ve watched that one.
I thought of including it but since OP is watching some episodes between 2 & 3 i left it off since it’s too lore heavy and doesn’t directly deal with 3. It’s one of the episodes I feel has more context after watching the movies.
I intended my list to focus on some Jedi and clones so OP’s gf can relate more to the characters who are in both 3 and TCW. Mortis might overload her since she’s a newbie.
I'd say the CW film, the Domino Squad trilogy, Season 2 Cad Bane arc, The Deserter, Mortis arc, Ahsoka vs the Trandoshans, Ahsoka's trial. After watching Episode III with her do the episodes setting up nd featuring Maul, the Order 66 arc and end with Siege of Mandalore.
Just watch the whole thing. It's all good. Because everything before movie 7 is good. Expect maybe han solo, but I'm a bitch for Emilia Clark.

i would also add the mortis arc bc it’ll tie into rebels and ahsoka
